Overview

Harlaxton College is looking for an experienced and motivated Sous Chef to join our high‑quality kitchen team. You will support the Executive Chef in delivering exceptional food for students, staff, guests, weddings, corporate events, and VIP functions within our iconic Grade I listed manor.

Responsibilities

  • Prepare, cook, and present high-quality dishes across daily service and events
  • Lead the kitchen team during service, ensuring consistency and high standards
  • Support menu planning, development, and costing
  • Maintain excellent food hygiene, allergen management, and health & safety compliance
  • Monitor stock levels, deliveries, rotation and assist with ordering
  • Help manage labour, food costs, portion control and reduce waste
  • Train, develop, and mentor junior team members
  • Deputise for the Executive Chef as required

Requirements

  • Prepare, cook, and present high-quality dishes across daily service and events
  • Lead the kitchen team during service, ensuring consistency and high standards

Who We Are Looking For

  • Previous experience as a Sous Chef or strong Senior Chef De Partie in a busy kitchen
  • High cooking standards with attention to presentation and detail
  • Ability to lead and motivate a team
  • Strong understanding of food safety, allergens, HACCP and kitchen processes
  • Calm and organised during peak service times

Desirable (not essential)

  • Professional cookery qualifications (City & Guilds / NVQ)
  • Banqueting, events, hotel, or large‑volume experience
  • Interest in sustainability and modern food trends
