JOB DESCRIPTION – Chef De Partie
REPORTING TO – Head Chef/ Senior Sous Chef in absence of Head Chef
DIRECT REPORTS – N/A
PURPOSE
To be a dedicated key member of the team within the Company's Flagship Brewery Tap and assist in producing its successful food operation whilst working within a high performing kitchen Brigade. The Kitchen Brigade will deliver an amazing Brewery Tap menu and experience of top quality which is Social, Beery and Pubby. To provide a safe working environment with all compliance, safety and legislation accurately maintained. To be a friendly, hospitable, and high performing team member whilst working closely with the Joule's Team to drive excellent brand standards and proudly embrace our shared company values.
RESPONSIBILITIES
1 - Food Quality & Production
Ensure all dishes are prepared to Brand spec
Implement systems which deliver a high-quality and consistent food offer
Participate in on-going training in food production, quality and service, including tasting sessions
Work with the Head Chef and Senior Sous Chef to solve any food quality, consistency and efficiency issues, niggles or irritations
Take pride in assisting the Head Chef and Senior Sous Chef in implementing and producing an accurate and photographed brand spec book set by the Joule's brand

Actively participate in on-going training & development programmes that will ensure you and your fellow team members are the best you can be at delivering an Amazing Joule's Menu
Have an enthusiastic, professional, calm and hands on approach
Ensure excellent team work ethic and communicate with the team effectively and efficiently to always maintain speed of service and cleanliness of kitchen
Attend the monthly team meetings, ensure great communication, feedback any concerns or areas for improvement in a professional manner and actively work towards a smooth running and successful Brewery Tap operation.
Work alongside your fellow team members to ensure consistency in Brewery Tap standards by complying with the documents that have been created for daily procedures in a variety of disciplines
3 - Compliance
Follow procedures to ensure the Brewery Tap Kitchen is a safe place for the team e.g. Safety Inductions, Health & Safety Policy, Risk Assessments, Fire Management, Accident & Incident Management
Comply with legislative requirements including Food Safety & Hygiene, and Fire Safety Regulations
Review any relevant kitchen records on a weekly basis as per the kitchen book
Working with the team, provide the highest hygiene standards and systems, never falling below a 5 star rating
Review all legislations and compliances every three months minimum and sign handbooks accordingly
4 - Stock & Property Control
Continually monitor wastage, day in and day out, and identify measures to help reduce food waste
Assist when needed with counting stock
Respect company equipment
Communicate any maintenance issues to the Head Chef/Senior Sous Chef in a well communicated manner
Ensure kitchen open and close down procedures are followed efficiently
5 - Planning & Organising
Complete the necessary daily, weekly, monthly administration as trained and in a timely manner
Meet weekly with the Head Chef/ Senior Sous Chef, communicating thoroughly and professionally
6 - Goals & Targets
Aim to achieve the goals and targets agreed and set with the Head Chef/Senior Sous Chef

CONDUCT
● Demonstrate an ongoing respect for confidentiality with Company information and detail

● Be a Joule's Ambassador whether inside or outside of work
● Undertake reasonable requests which are in keeping with the overall duties & responsibilities of the business
● Commit to and understand that being part of a business in the leisure sector, tasks can be wide & varied, and teamwork is required at all times of the week throughout the year
Job Type: Full-time
