Sous Chef Job Description - pub/venue/restaurant

You'll be a passionate, driven and creative chef. Someone who has a genuine interest in cookery skills and techniques and genuinely cares about food. Someone who understands quality and cost controls and a real team player.
You'll be comfortable in a busy kitchen, managing multiple tickets and working on or supporting different sections. You'll have great communication and will be a team player, some one who brings people together to problem solve and smash any targets set for you and your team.
Knowledgeable with regards to food safety and health and safety and uncompromising when it comes to upholding the highest of cleanliness and hygiene standards.
A positive, can do attitude. Friendly, collaborative and always up for a challenge.

Sous Chef Job Duties:

  • Leads kitchen team in chef's absence
  • Provides guidance to junior kitchen staff members, including, but not limited, to line cooking, food preparation, and dish plating
  • Assisting in the progression and training of apprenticeship commis chef role
  • Oversee and organises kitchen stock and ingredients
  • Ensures a first-in, first-out food rotation system and verifies all food products are properly dated and organised for quality assurance
  • Keeps cooking stations stocked, especially before and during prime operation hours
  • Manages food and product ordering by keeping detailed records and minimises waste, plus works with existing systems to improve waste reduction and manage budgetary concerns
  • Supervises all food preparation and presentation to ensure quality and restaurant standards
  • Works with head chef to maintain kitchen organisation, staff ability, and training opportunities
  • Verifies that food storage units all meet standards and are consistently well-managed
  • Assists head chef with menu creation
  • Coordinates with restaurant management team on supply ordering, budget, and kitchen efficiency and staffing
