Pastry Commis Chef Position Overview

Raffles London at The OWO is a renowned hospitality destination that unites luxury and heritage in one of the world's most historic addresses. This fine Grade II* listed Edwardian building has been transformed into a 120-room and suite collection, including 85 exceptional branded residences. The property features nine restaurants and three bars, including one by our signature chef Mauro Colagreco. The Guerlain spa and Pillar Wellness offer the latest in wellbeing, and a 600-seated-capacity grand ballroom, The Whitehall, is ideal for special occasions and events.

Key Responsibilities

An exceptional Pastry Commis Chef opportunity presents itself for a talented individual to join the Food & Beverage Department at Raffles London at The OWO. As a member of the team, you will support the Executive Pastry Chef and Chef de Partie/Sous Chef in maintaining high standards of hygiene, food, and service quality. You will be responsible for undertaking specific functions of Raffles kitchens/kitchen management as delegated by the Executive Pastry Chef and Senior Sous Chef/Sous Chef and/or Head Baker. As the Pastry Commis Chef, your responsibilities will include:

  • Maintaining stock control and ensuring section stock levels and production align with business demands.
  • Working towards a low-waste operation and being environmentally conscious.
  • Contributing to the effective management of costs and zero-waste factor.
  • Working on a rota basis based on hotel, outlet, and event hours of operation.
  • Ensuring awareness and adherence to correct policies and procedures.
  • Participating in the service in all kitchen outlets as business demands.
  • Communicating with supervisors regarding overtime needs on the section.
  • Working with, coaching, and supporting team members on the section.
  • Communicating effectively with supervisors, HODs, chefs, and supporting departments to meet operational needs.
  • Maintaining correct storage and labelling of food stuffs, equipment, and dry goods in all kitchen areas.
  • Receiving daily products and ensuring correct stock rotation and storage of food and kitchen items.
  • Checking cleanliness, working condition, and safety of all equipment used in the kitchen.
  • Taking corrective action when equipment does not meet standards.
  • Maintenance of equipment via correct channels.

Requirements

Raffles London at The OWO is seeking an exceptional Pastry Commis Chef with excellent leadership skills, able to create a positive kitchen culture. The ideal candidate will have previous relevant experience as Demi Chef de Partie in a luxury/Michelin star/5-star environment. A creative approach to producing high-quality food is essential. The ability and availability to work all shift patterns in a 7-day, 24-hour operation, including weekends, evenings, early mornings, holidays, and overnight shifts, are required.
