Main Purpose:
To oversee the delivery of catering services within HMP Doncaster, ensuring compliance with all relevant regulations, legislation, and guidelines.
Main Accountabilities:
- To work with the Catering Manager and team in the delivery of catering services, adhering to Health & Safety and Food Safety Regulations.
- To organize, supervise, and provide varied and healthy meals for prisoners, including special diets, events, and religious occasions.
- To deputize for the Head Chef/Team Leader in their absence, leading the catering provision.
- To ensure maintenance checks of equipment and infrastructure are completed, reporting defects to Facilities Management.
- To provide meals with a hot or cold drink outside normal mealtimes for prisoners who have missed a meal.
- To maintain the security and food safety of all foodstuffs during delivery, storage, and distribution within the kitchen area.
- To record and document relevant paperwork to comply with food hygiene regulations, Health & Safety, HACCP, and Company Policies.
- To provide training and supervision to kitchen workers and prisoners involved in food production or service.
- To perform random Quality Checks at food service points before, during, and after mealtimes.
- To address complaint issues and trends with a cohesive approach, working with the catering team.
- To work shift work and weekends as operationally required.
- To assist in prisoner movements and searches to and from the kitchen.
- To train for and carry out other work reasonably acceptable within the post holder's capabilities.
What you will need for the role:
- A strong commitment to the rehabilitation of prisoners.
- Experience working in a people-centered environment, with a good team ethic.
- Good working knowledge of a large catering operation, ideally with a minimum of 3 years' experience in a similar post, preferably within a custodial environment.
- Good supervisory skills, strong interpersonal skills, and good oral and written communication.
- Excellent time management.
- Basic computer skills, including knowledge of Excel, Word, and Outlook applications.
- Able to demonstrate resilience, with a basic understanding of conflict resolution and de-escalation, risk, and conflict management.
- Assertive, creative, and progressive, with good problem-solving skills.
Essential Qualifications:
- Literacy and Numeracy Level 2 or equivalent GCSE.
- Level 2- Food Safety.
- Level 2- Hazard Analysis and Critical Control Point (HACCP).
- Awareness of Allergen Control within Catering.
- Level 2- First Aid at Work.
Desirable:
- City & Guilds /1 & 2 or equivalent NVQ or similar in Food preparation and Production.
- Level 2- Food Safety.
- Level 2- Hazard Analysis and Critical Control Point (HACCP).
- Level 2- Allergens in Catering.
- Level 2- HSE.
