Beverage Technologist

Salary: £45,000 - £60,000 per annum (dependent on experience)

Job Description:

We are seeking an experienced Beverage Technologist to join our team at The Bread Factory Limited in Hendon. As a key member of our product development team, you will play a crucial role in translating product briefs into manufacturable products.

  1. All sample making, information collection to scale up to factory version ensuring accurate costs collated and managing all documentation of the development process.
  2. Translate product briefs from the creative studio and customers into products that will delight and meet requirements as laid out and specified.
  3. Working closely with procurement to source ingredients of a suitable quality.
  4. Ensure the ingredients that you are using in product development have provisional approval from technical and full approval if products progress through the development and trial phase.
  5. Hands-on kitchen work to produce quality product samples, either following a set recipe, for internal and external product presentations.
  6. Identifying any potential continuous improvement initiatives that arise, testing product differences with new ingredients or processes to ensure quality is maintained.
  7. As part of continuous improvement work in collaboration with key stakeholders to develop and adapt existing recipes to maintain or improve taste, texture, quality, and cost.
  8. You will work with production teams to carry out production trials making sure that trials are documented in a trial report.
  9. The trial report needs to capture the detail of the trial such as recipe, line settings, adjustments made through trial if any, SPC data where applicable, and any other relevant process information.
  10. You will be part of the team that will commission any new equipment acquired to ensure there is a smooth transition from previous production processes/techniques to the new.
  11. Where applicable ensure that trials are carried out into finished packaging to allow packaging to be evaluated.
  12. Ensure accurate & up-to-date housekeeping of all production trial and process documentation/record-keeping status of the project.
  13. Arranging product samples for microbiological and shelf-life testing, as well as conducting organoleptic assessments to ensure product quality and safety.
  14. Attend first production runs to support the production team and where necessary provide ongoing support to address any ongoing issues.
Required Skills and Qualifications:
  • A passion for food and a good understanding of the current markets and trends.
  • Several years in a food environment e.g., Restaurant, bakery or similar Product Development role.
  • Chef/Bakery related qualification is desirable.
  • The skills to develop recipes using factory processes.
  • Developing and maintaining in-depth knowledge and understanding of the site's manufacturing capabilities, systems, and processing parameters.
  • Good numeracy and computer skills.
  • Creative and innovative thinking.
  • Ability to work on your own with minimal supervision and use sound judgment.
