Job Title: Food and Beverage Operations Manager

Department: Hotel Restaurant

Reports to: Hotel Manager

Scope and General Purpose:

To manage and lead the Hotel restaurant team to ensure the professional day-to-day running of food and beverage service. Exceed the expectations of the guests to a five-star standard, inspire and create unique memorable experiences of escape and adventure, so everyone feels special.

Main Responsibilities:

Guests & Quality

• Host, manage and coordinate the food service and delivery within the resort for all guests to our 5* standards.

• Prepare the restaurant 5* standard and +1 service standard of food service for all guests.

• Communicate with the guests during their stay, so that they have their expectations exceeded by anticipatory faultless service.

• Deal with any guests' complaints and queries in accordance with Forbes Standards, and report actions appropriately to the Hotel Manager.

• Monitor competitors in the UK and abroad, and be aware of current policies, practices and trends to maintain the hotel as a World Leading Hotel.

• Support and assist the team with guests' requests, and service of breakfast, lunch/room service - tea/coffee/afternoon tea.

Team

• Liaise with the head chef in coordinating professional food service and knowledge.

• Performance Manage all F & B team members so that they are confident and professional in their role as Top Performers.

• Ensure a personal programme of Continuing Professional Development to ensure personal growth and development, and to keep up to date with management best practices.

• Support departments in the absence of the head of department, as necessary.

Productivity

• Manage the wine list so that it is interesting, varied and competitive.

• Manage the team rotas to ensure productivity and work-life balance compatibility.

• Communicate effectively with the 1887 team and other departments.

• Manage food and beverage supplies and listed suppliers for quality, variety, sustainability and efficiency.

• Manage the stock control for the hotel to ensure it is efficiently controlled, with annual price reviews and analysis to ensure competitive and positive working relationships with suppliers.

Health & Safety

• Manage the health and safety audit for the department, record and diagnose hazards.

• Ensure complete compliance of self and team with Health & Safety regulations, including Food Hygiene and Allergens.

• Ensure the psychological safety of all team members, so they do not fear speaking to you and any other team member.

Environment

• Proactively manage sustainability in your department in reducing energy consumption and wastage.

• Manage the sustainability policy to achieve the company's goals by embedding it into the departments and within the whole team.
