Job Summary

We are seeking an experienced and skilled Assistant Bar Manager to join our team at San Carlo Hale. As a key member of our bar department, you will be responsible for supporting the Bar Manager in the efficient running of the bar, undertaking all bar manager responsibilities in their absence, and ensuring the highest standards of customer service and bar operations.

Key Responsibilities

  • Assist the Bar Manager in the day-to-day operations of the bar, including managing staff, inventory, and customer service.
  • Undertake all bar manager responsibilities in their absence, including opening and closing procedures, staff supervision, and customer service.
  • Monitor and drive Spend Per Head in the bar department, ensuring optimal sales and profitability.
  • Effectively organize and run shifts as a duty manager, ensuring seamless service and high customer satisfaction.
  • Ensure that all bar consumables are kept to par and are within budget spend, minimizing waste and optimizing inventory.
  • Take responsibility for all bar stock control, including ordering, invoicing, and stock levels, ensuring accurate and timely reporting.
  • Ensure a two-week rota is available for the bar team at all times, working a month in advance for forecast rota.
  • Assess staff levels weekly and actively recruit if needed, ensuring adequate staffing to meet customer demand.
  • Take a lead on all bar recruitment, ensuring an excellent candidate experience throughout the process.
  • Onboard new staff, including full restaurant training and all CPL compliance, ensuring a smooth transition into the team.
  • Ensure the bar department has an up-to-date Talent Pipeline with training needs and succession plans, identifying and developing future leaders.
  • Conduct health checks monthly, producing an action plan and delegating tasks to ensure completion.
  • Ensure all Health & Safety policies are met, including legislative and licensing requirements, maintaining a safe and compliant work environment.

Requirements

  • Experience in a similar role, preferably in a high-volume bar environment.
  • Team management experience, with a proven track record of leading high-performing teams.
  • Excellent communication skills, with the ability to effectively communicate with staff, customers, and management.
  • Meticulous attention to detail, highly organized, and capable of handling multiple tasks simultaneously.
  • A proactive self-starter who can work independently with good judgment and minimal direction.
