We are seeking a skilled and experienced Head Pastry Chef to join our team in London. As a Head Pastry Chef, you will be responsible for preparing, baking, and finishing all pastries, baked goods, and other specified items in accordance with our company's quality standards and specifications.
Main Responsibilities:
- Maintain the organization's high standards and ensure total compliance with cleanliness and sanitation standards in work areas and equipment.
- Comply with and fully understand laws and regulations regarding licensing, food safety, health & safety, fire equipment, and fire training.
- Liaise with the Head Baker or Assistant to understand assignments, anticipate business levels, changes in the menu, and other information pertinent to job requirements.
- Complete all opening duties, including setting up workstations with mise en place, tools, equipment, and supplies according to standards.
- Inspect the cleanliness and working condition of all tools, equipment, and supplies, ensuring compliance with standards.
- Establish priority items for the day.
- Organize and check production schedules.
- Daily order all ingredients for production and inform the Assistant and Production Manager of any supplies needed for the day's tasks.
- Ensure that all perishable items are stored quickly and efficiently, avoiding unnecessary quantities being held in the pastry areas, and ensuring complete utilization of all items with minimal wastage.
- Create, prepare, produce, and bake pastries, baked goods, and other specified items for bakeries and wholesale customers following recipes and yield guides according to department standards.
- Create new recipes with the team and in conjunction with the Production Manager and CEO.
- Enforce high standards of hygiene and sanitation.
- Adhere to strict policies regarding personal grooming and hygiene.
- Ensure that all areas are fully cleaned down at the end of the working day.
- Label, date, and rotate items stored in all products and ingredients.
- Test and train new pastry team members to company standards.
