About the Role

We are seeking an experienced and dynamic Area Head Chef to lead and inspire our kitchen teams across locations in Poole and Weymouth area.

Key Responsibilities
  • Manage operations, overseeing ordering, stock levels, and waste control to ensure kitchen efficiency and budgeted profitability.
  • Provide hands-on leadership, managing your own time effectively and working across a mixture of lunch and dinner shifts.
  • Approve and manage head chefs' holidays, ensuring adequate relief support during absences and planning holidays to avoid peak periods.
  • Recruit lead roles within your kitchens, ensuring proactive succession planning for business seasonality and growth.
  • Deliver induction and ongoing support for new head chefs and kitchen management, using company training systems and checklists.
  • Coach and mentor chefs at all levels to fulfill their potential, planning achievable goals and managing performance.
  • Prepare schedules two weeks in advance, adjusting for seasonal demand and ensuring they are operationally sound and within budget.
  • Maintain discipline and manage the performance of management teams, providing regular feedback and conducting annual reviews.
  • Ensure all chefs are preparing food to the highest standards as defined by Rockfish specifications, using prep lists and guidance.

Requirements
  • Must have own car and be able to travel to Weymouth and Poole.
  • Proven experience in a similar leadership role overseeing kitchens across multiple locations.
