Job Overview

As a Head Chef with Sodexo at RAF Odiham in Hampshire, you will be responsible for managing an entire food and beverage production service for our armed forces personnel, improving their quality of life every day.

Key Responsibilities:

  • Lead the culinary operation and provide support for the production team.
  • Direct the preparation and duties of the sous chef, commis chefs, chef de parties, and other kitchen staff.
  • Arrange on and off duties for all staff and ensure a great work-life balance.
  • Ensure strict adherence to all EHO guidelines and systems and monitor sanitation practices to ensure that kitchen staff follow standards and regulations.
  • Function menu planning and follow a set military dining menu and weekly rotations.
  • Improvise and maximize the use of existing stocks where necessary.
  • Manage stock, oversee meal presentation, and liaise with the client for requests.
  • Work with the FOH management team to drive service excellence.
  • Ensure your team is fully trained and refreshed regularly to the client/Sodexo's standard.

Requirements:

  • NVQ level 2/3 or experience working in a busy kitchen environment.
  • IT skills, great technical communication, and Microsoft package experience.
  • Vast knowledge of food production methods.
  • Extensive knowledge of allergens and the impact/awareness needed.
  • Impeccable leadership skills.
  • To be thorough and pay attention to detail.
  • The ability to monitor your own performance and that of your colleagues.
  • The ability to accept criticism and work well under pressure.
  • The ability to organize your time and workload.
