Claridge's Restaurant seeks an experienced Pastry Senior Chef de Partie to join our team in a fast-paced pastry kitchen environment. Key responsibilities include ensuring the highest standards in food preparation, instructing and supervising the brigade in their daily tasks, and maintaining high levels of communication between Sous Chefs and Chef de Parties. A 5-star background in a similar position is essential for this role, along with advanced patisserie skills including chocolate tempering. The ideal candidate will be a team player with excellent communication skills and the ability to work in a high-pressure environment.

Key Responsibilities:
  • Prepare ingredients for and during service, working alongside the Pastry team.
  • Assist the Pastry Head Chef in managing pastry and bakery production.
  • Maintain the highest standards in food preparation and presentation.
  • Instruct and supervise the Chef de Parties and the brigade in their daily tasks.
  • Participate in supervising and preparation of all baked goods, pastries, and desserts.
  • Ensure high levels of communication between Sous Chefs and Chef de Parties, especially in dealing with special requests.
  • Prepare food requisitions, taking into account advance planning, special bookings, and staffing levels.
  • Maintain a positive relationship with the kitchen and front-of-house team.

Requirements:
  • Experience as a chef de partie or higher within a fast-paced pastry kitchen environment.
  • Advanced patisserie skills, including chocolate tempering.
  • 5-star experience in a similar position is essential for this role.
  • Passion for food and quality products and ingredients.
  • Ability to work in a high-pressure environment.
  • Excellent attention to detail.
