Job Overview

Sodexo is seeking a highly skilled and experienced Executive Chef to lead our culinary team at Amesbury Bulford Barracks. As a key member of our team, you will be responsible for managing the food and beverage production, ensuring high-quality service to our armed forces personnel.

Key Responsibilities:

  • Lead the culinary operation and provide support to the production team.
  • Direct the preparation and duties of the sous chef, commis chefs, chef de parties, and other kitchen staff.
  • Arrange on and off duties for all staff, ensuring a great work-life balance.
  • Ensure strict adherence to all EHO guidelines and systems, monitoring sanitation practices to maintain high standards.
  • Function menu planning, following a set military dining menu and weekly rotations.
  • Improvise and maximize the use of existing stocks where necessary.
  • Manage stock, oversee meal presentation, and liaise with the client for requests.
  • Work with the FOH management team to drive service excellence.
  • Ensure the team is fully trained and refreshed regularly to the client/Sodexo's standard.

Requirements:

  • NVQ level 2/3 or experience working in a busy kitchen environment.
  • IT skills, great technical communication, and Microsoft packages experience.
  • Vast knowledge of food production methods.
  • Extensive knowledge of allergens and awareness.
  • Impeccable leadership skills.
  • Ability to monitor performance and that of colleagues.
  • Ability to accept criticism and work well under pressure.
  • Ability to organize time and workload.
