Job Title: Chef de Partie

We are seeking a skilled and experienced Chef de Partie to join our team at Gilpin Hotel & Lake House, a prestigious member of Relais & Châteaux. As a Chef de Partie, you will play a vital role in delivering exceptional culinary experiences to our guests.

Key Responsibilities:
  • Prepare and cook dishes according to recipes, guidelines, and instructions within the open kitchen.
  • Execute culinary techniques specific to the assigned section, ensuring quality, taste, and presentation meet established standards.
  • Assist in setting up and organizing the assigned section before service, ensuring all necessary ingredients, equipment, and tools are available and in proper working order.
  • Maintain a clean, tidy, organized, and safe working environment at all times.
  • Monitor and maintain the quality and consistency of dishes throughout the cooking process, tasting and adjusting seasoning as needed, and reporting any quality or consistency issues to senior chefs for resolution.
  • Assist in managing ingredient inventory for the assigned section, ensuring proper stock rotation, storage, and labeling, and notifying senior chefs of any shortages or discrepancies in a timely manner.
  • Work closely with the culinary team, effectively communicating and collaborating to ensure smooth operations and timely service, and assisting colleagues as needed and following instructions from senior chefs.
  • Contribute ideas and suggestions for new dishes, improvements, or adaptations for the assigned section, collaborating with senior chefs in menu planning and development.
  • Adhere to strict food safety and hygiene standards, including proper handling, storage, and labeling of ingredients, and ensuring cleanliness and sanitation in the assigned section, following all health and safety regulations.
  • Show a desire to develop and complete any training courses available and encourage others.
  • Take responsibility and ownership of their section, ensuring a high standard of cleanliness and tidiness is maintained.
  • Set examples to less experienced team members.
  • Complete a job and then assist others.
  • Improve culinary skills and knowledge continuously, by staying updated on industry trends, techniques, and new ingredients.
  • Cook confidently and present food to guests well, having the ability to explain dishes in a clear, confident, and professional manner.
  • Seek guidance from senior chefs and actively participate in training programs and workshops.
  • Be presentable at all times in clean, pressed uniform, with long hair tied back, and attention to personal hygiene is also extremely important.
Requirements:
  • Culinary qualification or experience in a professional kitchen.
  • Food hygiene qualification is essential.
  • Previous experience in a professional kitchen, preferably in a similar role.
  • Strong culinary skills with knowledge of various cooking techniques and kitchen equipment, particularly in the pastry section.
  • Attention to detail and a commitment to delivering high-quality dishes.
  • Understanding of food safety and hygiene standards and the ability to follow them strictly.
  • Excellent teamwork and communication skills to effectively collaborate with the kitchen team.
  • Flexibility to work evenings, weekends, and holidays, as per the demands of the restaurant.
  • Physical stamina and dexterity to stand for long periods, lift heavy pots and pans, and perform repetitive tasks.
  • Can act as a First Aid Aider or Fire Warden in the event of an accident or emergency.

We offer a competitive salary starting from £32,500, gratuities allocated on a points basis, and a range of benefits including canteen, company events, company pension, discounted or free food, employee discount, free or subsidized travel, gym membership, and on-site parking.
