About the Role:

We are seeking a skilled Chef de Partie to join our team at Sussex Inns. As a key member of our kitchen brigade, you will be responsible for overseeing a specific section or station within the kitchen and ensuring that the food prepared in that area meets the highest quality and presentation standards.

Key Responsibilities:

• Food Preparation: Prepare and cook food according to recipes and specifications, demonstrating a thorough understanding of culinary techniques, ingredients, and flavour combinations.

• Station Management: Manage your assigned station in the kitchen, ensuring that all necessary ingredients, equipment, and tools are available and in working order.

• Quality Control: Ensure that all dishes leaving your station are of high quality, properly cooked, and well-presented, paying attention to details such as taste, texture, seasoning, and portion sizes.

• Training and Supervision: Provide guidance, instruction, and feedback to commis chefs or apprentices working in your section, ensuring that tasks are executed correctly and efficiently.

• Menu Development: Collaborate with the executive chef or sous chef in developing new menu items or specials for your section, contributing ideas, testing recipes, and providing feedback on menu planning.

• Stock Management: Assist in managing the inventory and stock levels for your section, monitoring ingredient quantities, placing orders, and ensuring proper storage and rotation of perishable items to minimize waste.

• Health and Safety Compliance: Follow and enforce proper health and safety regulations and food handling practices, maintaining cleanliness and hygiene standards in your station.

• Time Management: Manage your time effectively to ensure timely preparation and delivery of dishes, prioritizing tasks, coordinating with other kitchen staff, and maintaining a smooth workflow.

• Collaboration: Work closely with other members of the kitchen team, including the sous chef, other line cooks, and kitchen assistants, to ensure smooth operations and effective communication.
