Executive Chef

At Accor Hotels, we are seeking an exceptional Executive Chef to lead our culinary team and drive the success of our restaurant operations.
Key Responsibilities:
- Menu Development: Design and create menus that align with our restaurant's concept, target audience, and culinary vision, considering factors such as seasonality, food trends, and dietary restrictions.
- Food Preparation: Oversee and participate in food preparation, ensuring that dishes are prepared to high standards of taste, presentation, and quality.
- Staff Management: Recruit, hire, and train kitchen staff, including sous chefs, line cooks, and prep cooks, and manage all aspects of kitchen operations, including workflow, organization, and scheduling.
- Quality Control: Maintain strict quality control standards to ensure that all dishes leaving the kitchen meet our restaurant's standards, tasting and evaluating food regularly, monitoring portion sizes, and providing feedback and guidance to the kitchen staff.
- Cost Management: Control costs in the kitchen, including food costs and labor expenses, developing and managing budgets, negotiating with suppliers, and optimizing the use of ingredients to minimize waste and maximize profitability.
- Health and Safety: Ensure compliance with health and safety regulations and food handling standards, establishing and enforcing proper sanitation and safety procedures, conducting regular inspections, and addressing any issues or concerns promptly.
Requirements:
- Diploma in Tourism / Hotel Management or related field
- Professional certificate in Culinary Skills/Arts (including food preparation)
- Level 3 Food Safety & Hygiene certification
