About the Role

We are seeking a highly skilled and experienced Senior Sous Chef to join our team at dnata Catering UK. As a Senior Sous Chef, you will play a key role in the development and implementation of our culinary strategy, with a strong emphasis on Regional Chinese cuisine.

Key Responsibilities
  • Work closely with our customer-facing teams to understand customer requirements and develop menus that meet their needs.
  • Develop and implement new Regional Chinese dishes and products that meet customer briefs and commercial constraints.
  • Lead menu presentations to customers and assist in the development of new products and presentation concepts.
  • Collaborate with our procurement team to drive range improvement and consolidation, ensuring that we deliver good, better, and best in each category.
  • Ensure that all recipes are communicated effectively and provide information to the commercial department as required.
  • Respond positively to cost and production implications of new customer specifications.
  • Work with our quality assurance team to ensure that all products meet our high standards of quality and safety.
  • Develop and maintain relationships with internal departments and external customers to ensure that we deliver exceptional customer service.
  • Stay up-to-date with food trends and bring new ideas and concepts into our traditional airline catering operations.
Requirements
  • Professional culinary qualifications, such as 706/1, 706/2, and 706/3, or diploma/degree level.
  • Competent in Regional Chinese cuisine and fluent in either Mandarin or Cantonese.
  • Previous product development experience in a manufacturing environment or similar.
  • Experience of working in various types of culinary outlets, including fine dining and international.
  • Excellent communication and interpersonal skills, with the ability to build relationships with internal departments and external customers.
  • Strong problem-solving skills and the ability to work under pressure to meet deadlines.
  • Flexibility to work at other UK locations as necessary for presentations.
