About the Role

We are seeking a skilled and experienced Second Chef to join our culinary team at Gateway Recovery Centre, a state-of-the-art facility providing care for men and women with complex mental health requirements.

Key Responsibilities

  • Support the Head Chef in the day-to-day running of the kitchen, ensuring efficient and effective food preparation and service.
  • Maintain good food storage procedures and stock rotation, adhering to established protocols.
  • Prepare and cook meals to a consistently high standard, taking into account special requests and dietary requirements.
  • Assist in food service, including preparing and producing foods for conferences and banquets.
  • Participate in food costings through effective cost control procedures.
  • Adhere to 'Safer Food Better Business' standards and record keeping.
  • Adhere strictly to Food Hygiene Regulations and other safety procedures at all times.
  • Take charge of the department in the Head Chef's absence, ensuring service requirements are met.
  • Assist the Head Chef in researching and creating new menus, ensuring meals meet high quality and healthy eating guidelines.
  • Correctly fill all paperwork related to the Hazard Analysis and Critical Control Point system (HACCP).

Requirements

  • Be 18 years or older.
  • Hold GCSE or equivalent in English.
  • Hold City & Guilds 706/1 and 2 (or equivalent) Basic Food Preparation Cooking.
  • Hold Basic Food Hygiene certification (essential).
  • Hold Intermediate Food Hygiene certification (desirable).
  • Have previous experience in a similar environment.
  • Have previous experience in delivering a service on mass.
  • Have menu planning, costing, ordering, stock control, and budget experience.
