Apprentice Commis Chef - Bournemouth

Shepherd Neame is pleased to announce an opportunity for an Apprentice Commis Chef.

No prior culinary or hospitality experience is necessary; as long as you possess the qualities outlined below, we can provide the training you need.

As a chef working towards your Level 2 Commis Chef apprenticeship, you will learn the fundamental operations in each kitchen section through our training provider partner at the Commis Chef Academy. This program allows chefs to explore, appreciate, and evaluate each kitchen area, ultimately guiding them to the section that inspires them the most. Throughout your apprenticeship, you will participate in workshops and development days designed to enhance your knowledge, skills, and professional behaviors. Additionally, apprentices will have access to an online learning platform and portfolio system.

What will your responsibilities include?

Your duties will primarily take place in the kitchen and will encompass:

  • Food preparation - washing, cutting, and portioning as directed
  • Cooking and presenting dishes according to specifications
  • Food rotation - maintaining high standards of food hygiene
  • Equipment preparation and sanitation - ensuring all tools meet food hygiene and kitchen standards
  • Kitchen cleanliness - upholding cleanliness and maintenance standards in the kitchen

While previous catering experience is advantageous, it is not a requirement. If you have a passion for food, confidence, motivation, and a strong team spirit, we can equip you with the necessary skills. Our training partners, HIT Training, will guide you through your educational journey.

The Commis Chef Academy program features engaging master classes and workshops. You will be required to travel to a Training Kitchen as part of your educational experience.

Apprentices will work alongside industry experts, exchanging ideas and enhancing their understanding of key areas such as food preparation, cooking techniques, flavor profiling, dish composition, and seasonality. The workshops provide content derived from industry-recognized qualifications. Each apprentice will be assigned a coach for personalized 1-2-1 sessions at their workplace and for progress evaluations with their line manager.

What do we expect from you?

  • The apprenticeship lasts 12 months, with an additional 3 months for the End Point Assessment
  • You will need a minimum of 6 hours per week in paid hours to complete your off-the-job training (both on-site and off-site)
  • Attendance at training sessions at the Chef Academy approximately every four to six weeks is required

What are the potential career paths after completing the apprenticeship?

Upon successful completion of this Level 2 apprenticeship, you may have the opportunity to advance into a Senior Production or Chef De Partie position.
