The successful candidate will be responsible for overseeing the provision of meals for prisoners, ensuring the quality and quantity of meals served, and maintaining a safe working environment. They will also be responsible for monitoring and reporting operating faults, verifying and signing off documentation, and ensuring compliance with all Food Safety Management systems and Hygiene Assessments.
Key Responsibilities- Ensure the provision of meals for prisoners and the quality and quantity of meals served.
- Monitor a safe working environment, requesting repairs to kitchen equipment and reporting operating faults.
- Verify and sign off documentation as appropriate, ensuring compliance with all Food Safety Management systems and Hygiene Assessments.
- Manage the catering budget, including the provision of cultural, health nutrition, and special dietary needs.
- Act as point of contact for all external/internal stakeholders visiting the kitchen.
- Estimate, order, and manage resources to deliver the catering requirements of the establishment.
- Maintain security standards in the kitchen area, in line with Local Security Strategy (LSS) and National Security Framework (NSF).
- Manage the prisoner workforce in the kitchens, ensuring they are appropriately inducted, trained, supervised, and paid.
- Implement national policy and/or contribute towards the development of local policy, procedures, and practice for catering.
- Collect, collate, analyze, and act on data concerning the catering function.
- Train wing food handlers on hygiene standards.
- Carry out kitchen inspections, audit preparation, and documentation for audit purposes.
- Manage devolved budgets in accordance with financial procedures.
- Manage all staff within their area, including staff performance, development, and annual appraisal.
- Ensure all HMPPS standards and Service Delivery Indicators (SDIs) are implemented and managed within the relevant work area.
- Ensure all national and local policies and procedures are implemented and compliant.
- Attend relevant boards/meetings and contribute to discussions.
- Provide leadership and direction to supervisors and staff within their defined work area.
- Produce relevant reports and ensure all correspondence is replied to within agreed timescales.
- Liaise and form good relationships with internal and external stakeholders.
- Contribute to the preparation of the prison contingency and emergency plans.
- Manage resources to deliver activities within the defined work area.
- Ensure the defined work area and associated activities comply with Health and Safety legislation.

The successful candidate must hold qualifications and competences of F&S Supervisor – Catering, and a Food Hygiene Level 4 Diploma or equivalent Level 4 award in HACCP. They must be familiar with applying all current health, safety, and hygiene-related regulations that apply in a working kitchen environment and demonstrate previous competency at supervising or managing staff within a kitchen environment.
