Senior Sous Chef Opportunity

Fortnum & Mason, a renowned luxury retailer, is seeking an experienced Senior Sous Chef to join our esteemed culinary team at 45 Jermyn Street. This is an exciting opportunity for a skilled professional to expand their expertise in a fine dining environment and contribute to the success of our flagship store.

Key Responsibilities:
  • Collaborate with the Senior Team to ensure exceptional food quality and presentation in the section of responsibility.
  • Coach and develop junior chefs to enhance their skills, leading by example and promoting a culture of excellence.
  • Regularly inspect the section to maintain high standards, ensuring audits and temperature checks are completed.
  • Work closely with Senior Chefs to produce monthly reporting for the Kitchen, driving operational efficiency and improvement.
  • Develop a collaborative partnership with the Restaurant team, ensuring seamless communication and a unified approach to delivering exceptional customer experiences.
  • Effectively communicate menu information to the team, ensuring a cohesive and informed approach to food service.
  • Demonstrate exceptional planning, organizing, and time management skills to drive operational execution across the section.
  • Ensure adherence to company policies, controls, and standards, including due diligence, cleanliness, and HSE protocols.
  • Monitor and maintain inventory, highlighting any discrepancies to the Senior Chefs.
  • Deliver regular feedback and coaching to the team, recognizing achievements and driving performance improvement.
  • Identify training needs and coach team members to drive performance and enable change.
Requirements:
  • Proven experience as a Senior Sous Chef in a fine dining restaurant.
  • Willingness to learn and grow, with a passion for food and a commitment to excellence.
  • Excellent longevity with previous employers, demonstrating a strong work ethic and dedication to the culinary profession.
  • Maintenance of Food Safety standards, ensuring a safe and healthy working environment.
