As a Sous Chef, your responsibilities will include:

  • Assisting the Head Chef in the daily operations of the kitchen.
  • Ensuring proper food storage and stock rotation in accordance with established guidelines.
  • Aiding in the preparation, planning, and cooking of meals to consistently high standards, accommodating special requests and dietary needs.
  • Supporting food service activities.
  • Preparing and producing dishes for events and gatherings.
  • Participating in food cost management through effective control measures.
  • Complying with 'Safer Food Better Business' standards and maintaining accurate records.
  • Adhering to Food Hygiene Regulations and safety protocols at all times.
  • Leading the kitchen in the absence of the Head Chef to ensure service standards are met.
  • Collaborating with the Head Chef to research and develop new menus that align with healthy eating guidelines.
  • Accurately completing all documentation related to the Hazard Analysis and Critical Control Point (HACCP) system, including temperature logs and cleaning schedules.

To excel in this position, you will need:

  • To be at least 18 years old.
  • A GCSE or equivalent qualification in English.
  • City & Guilds 706/1 and 2 (or equivalent) in Basic Food Preparation and Cooking.
  • Basic Food Hygiene certification (essential).
  • Intermediate Food Hygiene certification (desirable).
  • Prior experience in a similar culinary environment.
  • Experience in delivering large-scale food services.
  • Skills in menu planning, costing, ordering, stock management, and budgeting.
