Apprentice Commis Chef - Bournemouth

Shepherd Neame is thrilled to announce an opening for an Apprentice Commis Chef.

No prior culinary or hospitality experience is necessary; as long as you embody the qualities listed below, we are prepared to train you and equip you with all the essential skills.

As a chef pursuing your Level 2 Commis Chef apprenticeship, you will gain insights into fundamental operations across various kitchen sections through our training provider partner at the Commis Chef Academy. This educational experience allows chefs to explore and appreciate each kitchen area, helping them identify where their passion lies. Throughout your apprenticeship, Level 2 Commis Chef apprentices will participate in workshops and development days designed to enhance your knowledge, skills, and professional conduct. You will also have access to an online learning platform and portfolio system.

Your Responsibilities as an Apprentice:

Your duties will primarily take place in the kitchen and will encompass:

  • Food preparation - washing, cutting, and portioning as directed
  • Cooking and presenting dishes according to specifications
  • Food rotation - ensuring adherence to hygiene standards
  • Equipment preparation and sanitation - maintaining cleanliness and food safety standards
  • Kitchen sanitation - upholding cleanliness as part of routine operations

While previous catering experience is advantageous, it is not a requirement. If you have a passion for food, are confident, motivated, and a team player, we can provide the necessary training and guidance. Our training partners, HIT Training, will support you throughout your learning journey.

The Commis Chef Academy program includes engaging master classes and workshops. You will be required to travel to a Training Kitchen as part of your educational experience.

Apprentices will collaborate with industry experts, exchanging ideas and enhancing their understanding of key topics such as food preparation, cooking techniques, flavor profiling, dish composition, and seasonality. The workshops incorporate content from industry-recognized qualifications. Each apprentice will be assigned a coach for personalized sessions at their workplace and for progress evaluations with their line manager.

Requirements:

  • The apprenticeship lasts 12 months, with an additional up to 3 months for the End Point Assessment
  • A minimum of 6 hours per week in paid hours is required for off-the-job training (both on-site and off-site)
  • Attendance at training sessions at the Chef Academy approximately every four to six weeks is necessary

Future Opportunities:

Upon successful completion of this Level 2 apprenticeship, you may have the opportunity to advance into a Senior Production or Chef De Partie position.
