About the Role

We are seeking a highly skilled and motivated Executive Chef Assistant to join our culinary team at Château de Mercuès. As a key member of our kitchen team, you will be responsible for assisting our Executive Chef in the preparation and presentation of our menu items.

Key Responsibilities

  • Assist in the preparation of ingredients, including cutting, chopping, and measuring, to ensure all ingredients are ready for cooking according to recipes and instructions provided.
  • Help set up the cooking stations before service, ensuring all necessary equipment, tools, and ingredients are available and ready for use. Maintain a clean, organized, and properly stocked workstation throughout the shift.
  • Execute basic cooking techniques, such as grilling, frying, sautéing, and baking, under the guidance of senior chefs.
  • Follow recipes and portion control guidelines to ensure consistency and presentation standards are met.
  • Adhere to strict food safety and hygiene standards, including proper handling, storage, and labeling of ingredients. Maintain a clean, tidy, organized, and safe working environment at all times, following all health and safety regulations.
  • Work closely with other members of the kitchen team, communicate effectively to ensure smooth operations. Assist colleagues when needed and follow instructions from senior chefs.
  • Contribute ideas and suggestions for new menu items, presentations, and improvements in collaboration with the culinary team. Provide feedback on the feasibility and practicality of new recipes or techniques.
  • Monitor the quality and taste of dishes throughout the cooking process, adjust seasoning or cooking times as needed. Report any quality or consistency issues to senior chefs for resolution.
  • Improve culinary skills and knowledge continuously, by staying updated on industry trends, techniques, and new ingredients.
  • Seek guidance and actively participate in training programs and workshops.
  • Present a professional image at all times, adhering to company dress code and personal hygiene standards.

Requirements

  • Culinary qualification or experience in a professional kitchen.
  • Food hygiene qualification is essential.
  • Basic knowledge of cooking techniques, food preparation, and kitchen equipment.
  • Understanding of food safety and hygiene standards and the ability to follow them strictly.
  • Strong teamwork and communication skills to effectively collaborate with the kitchen team.
  • Ability to work efficiently in a fast-paced, high-pressure environment.
  • Flexibility to work evenings, weekends, and holidays, as per the demands of the restaurant.
  • Physical stamina and dexterity to stand for long periods, lift heavy pots and pans, and perform repetitive tasks.
  • Ability to act as a First Aid Aider or Fire Warden in the event of an accident or emergency.
