Job SummaryWe are seeking an experienced and skilled Executive Sous Chef to join our culinary team at The Newt in Somerset. As a key member of our kitchen brigade, you will play a crucial role in supporting the Head Chef in delivering exceptional dining experiences to our guests.
Key Responsibilities- Support the Head Chef in ensuring the smooth and efficient running of the kitchen, including management of costs, staffing controls, sales analysis, and forecasting.
- Deliver exceptional food quality by monitoring and managing guest experiences, making improvements, and assisting the Head Chef as needed.
- Lead and develop a team of 15 chefs and kitchen porters, fostering a strong working relationship with the Restaurant Manager to ensure seamless collaboration between departments.
- Maintain high company standards from cooking to cleaning, ensuring that every aspect of the kitchen operation meets our high expectations.
- Represent the company with impeccable style, ensuring that you and your team always look professional and polished.
- Previous experience as a Sous Chef in a luxury restaurant or hotel, with a minimum of two years' experience in a similar role.
- Confident leadership skills with the ability to motivate and inspire a team.
- Excellent time management and self-motivation skills, with the ability to work under pressure in a fast-paced environment.
- Strong business acumen with the ability to analyze sales data and make informed decisions.
- Attention to detail with a focus on delivering exceptional food quality and presentation.
- Microsoft Office skills and good technical skills, with the ability to adapt to new systems and technology.
- Passion for food, beverage, and luxury hospitality with a desire to continuously develop and grow in your role.
- Knowledge and experience in food preservation, with a focus on Asian preservation techniques.
- Creativity and innovation in developing new food products and menus, utilizing the estate's offerings and foraged products.
- Ability to work collaboratively with the kitchen team, Restaurant Manager, and other departments to ensure seamless service delivery.
