**Job Title: Labatory Technician (Quality Control Assistant)**

**Department: Winery**

**Reports to: Quality Control Manager**

**Key Communicators: Head Winemaker, Senior Winemaker, Winemaker, Cellar Manager, Winery Team, Winery Office Manager.**

**Job purpose:To perform all routine wine analysis and drive continuous improvement in Nyetimber’s QC and collaborate on HACCP Food Safety programs.**

**Major Accountabilities**:
To assist and contribute towards the Quality Control and HACCP Program
- Assist the Quality control manager to lead routine internal and external site audits
- To keep updated winery records and put in place corrective measures if required
- To sit-in and contribute towards HACCP team meetings when required
- To follow record keeping procedures and aid in analysing HACCP verification results

Responsible for accurate and timely winery analysis
- To undertake accurate analysis of wines including pH, TA, Alcohol, SO2, Enzymatic assays and Specific Gravity.
- Ensure that results are within pre-defined winery parameters and to generate a Certificate of Analysis.
- Working to strict deadlines and timescales, especially at disgorgement, bottling and harvest when obtaining accurate results on time is critical for production decisions.
- To carry out harvest laboratory analysis and to work to strict deadlines. Duties include juice analysis, daily fermentation checks, yeast and bacteria culture monitoring and more.
- To undertake testing of benchmark wine samples supplied by the Winemaker.
- To design and optimise new testing methods and assays.

Responsible for maintaining the winery laboratory as a professional work environment:

- To ensure the lab is kept clean and tidy
- Ensure timely reordering of laboratory supplies
- Monitor reagents stock control.
- To train harvest temporary lab staff
- Ensure that reagents are labelled according to local regulations.
- Ensure that laboratory and winery waste is disposed according to regulations.
- Use and calibration of a range of laboratory equipment. Responsible for lab equipment to ensure all is functional, in a good state of repair and serviced when required.

Administrative duties:

- Keeping accurate and organised hard and soft copy records of all data and work undertaken.
- To ensure all SDS&COSHH forms for chemicals used are present and filed within the laboratory.
- Working to SOP guidelines and using Lab Methods. Ensuring that SOP’s and Lab Methods are kept up to date and are clear and accurate.
- To keep any reporting spreadsheets and Vintrace up to date for use by the Winemaking team

Occasional cellar work:

- To assist the Winery Team with disgorging trials.
- Gathering trial blend samples,
- To work in collaboration with all members of the winery team to ensure smooth operation of the winery, good communication and a positive work environment.

To act as a positive ambassador of Nyetimber towards all external parties.
