Job Title: Kitchen Porter

Reports to: Sous Chef / Head Chef

Job Purpose: To assist the Head Chef and the kitchen team in maintaining the cleanliness of the kitchen and back of house areas.

Main Duties:

- To comply with all legal aspects implemented and monitored by the Food and Hygiene Regulations, Health and Safety at Work Act and Fire Regulations.
- Always always conduct yourself in a professional manner with the utmost discretion.
- To assist the Head Chef and Sous Chef in the effective and efficient cleanliness of the kitchen and back of house areas - to the required standards, ensuring all statutory requirements are met.
- Use of the dish wash machine to clean all crockery - carefully - to minimise breakages.
- Cleaning of all equipment and utensils used by the kitchen team.
- Correct storage of all clean crockery and utensils.
- To maintain the Hotels standards of department and personal appearance, cleanliness and hygiene of the kitchen areas.
- To maintain good liaison, communication and working relationships with Management, the kitchen team and all other departments in the Hotel.
- To ensure all operation equipment is used and maintained to the legal standards of Health and Safety and to report any deviation from standards immediately to the Head Chef.
- Compliance with all instructions given by immediate supervisor.
- Following all schedules within the kitchen and completion of daily check sheets and temperature logs.
- Ensure full refuse bags are removed and replaced promptly, and that full swing bins are removed and replaced immediately, clearing spillages.
- Smooth running of all aspects of the kitchen and back of house areas.
- Responsible for undertaking the many tasks during the preparation, storage and service of food and the other associated tasks.
- Accepting deliveries, in accordance with the Food Safety Regulations, ensuring strict stock rotation, when required to.
- Maintain a high level of personal hygiene and cleanliness whilst in the workplace.
