About this Permanent Head Chef role
- As head Chef you will be reporting to the Restaurant Manager, you will be accountable for all aspect of running the kitchen operation on site, providing a consistent high quality of food to all our guests.
- You will be an inspiring leader with a passion for food and providing an outstanding guest experience.
- You will be responsible for managing our onsite catering operation, developing, and training a high-performing team and liaising effectively with other departments within the business.
- You will have full P&L responsibility for the kitchen operation.
Key Role Responsibilities
- To manage the catering and operations of a multi outlet on-site, and Events.
- To build & develop an appropriate kitchen brigade to be able to deliver the appropriate standards in a cost effective and profitable way.
Recruit new staff if & when required in line with company processes.
- To be an inspirational leader to your team, leading by example.
- To build a strong and close working relationship with the restaurant manager to ensure that the guest experience is always of a high standard.
- Ensure that all food leaving the kitchen is cooked correctly, quality is consistent and that orders are completed in reasonable timescales as agreed.
- Ensure adequate training is provided to maintain high skill levels across the whole team.
- Fully understand the client's specific needs and design and execute menus for all outlets with accurate costings and appropriate pricing architecture.
- Work alongside the marketing department to promote the business.
- To work alongside the facilities manager so that equipment is maintained, and Health and Safety requirements are fully complied with always.
- To work closely with suppliers to ensure cost effective purchasing is achieved and within agreed budgets.
- Must be sound financially knowledgeable to ensure tight control of the P&L. Need to ensure that purchasing costs, staffing costs, waste, cost of sales, are all managed and that the gross profit and net profit targets are achieved.
- To be able to create staffing rotas in line with budgets and forecasts.
- Knowledge of the company accounting system to raise PO's and process invoices in a timely manner.
- Understanding of the company HR system, "People HR" to effectively administer the team.
- To continually monitor the quality of the visitor experience and use feedback to ensure continuous improvement and efficiency.
- To work constructively with all other department within the business, including guest experience, events, marketing, facilities & maintenance
- Any other duties as may reasonably be required and that fall within the scope and range of the job.
Skills and Experience Required
- You will need to have at least 3 to 5 years' relevant Head chef experience, leading catering teams, preferably covering multi-sites, including events and large-scale short orders (750 to 1000 a day at peak).
- You will have proven leadership skills including excellent communication, relationship management and interpersonal skills. You will have a proven track record of developing, motivating and inspiring highly effective catering teams.
- You will have strong organisational skills, with the ability to prioritise workloads and be flexible to changing circumstances.
- Have strong cooking skills and the ability to inspire and lead others to deliver the same high quality of food consistently.
- You will have the ability to think strategically as well as have a hands-on, leading by example approach, demonstrating a can do, positive attitude
- You will have the ability to react well under pressure and to stay calm and rational in pressurized situations whilst leading the team.
- You must be a self-starter who is able to work without direct day-to-day supervision, but equally you must be a team player able to work effectively with peers and colleagues.
- Budget experience: setting, managing, and controlling, will be essential.
- You will have the ability to constructively challenge the norm and come up with new ideas and opportunities to continue to improve the attraction and the experience we deliver to our visitors.
