Copper & Ink are currently looking for an experienced Mixologist to join their 2 AA rosette restaurant in Blackheath (SE3), to work closely with the management team to set up and run a cocktail bar within the building.

Working alongside the restaurant manager and supervisor, and the exec and head chef, you will start by planning the setup of the cocktail bar, from layout to equipment and from spirit selection to cocktail design.

Alongside Becky, the restaurant manager, you will devise a cocktail list of classics and modern interpretations, including designing and developing drinks of your own. Working with MasterChef alumni Tony & Rob in the kitchen, you'll create a food menu to compliment the drinks as well as working on garnishes, butters and washes. With floor supervisor Scott, you'll establish a service standard for the space and build a team to manage the bar and floor.
- You must have prior experience designing and delivering high end cocktails, both from classic pours to your own creations.
- You should have experience making garnishes and working in a kitchen environment to create the building blocks for your cocktails.
- You will have experience managing a bar-back or junior mixologist as well as running a cocktail lounge.

The restaurant currently operates Wednesday to Saturday, with Tuesday as an opportunity to restock and prepare garnishes. As such, you'll have every Sunday and Monday off, and work a 3.5 day week across the remaining days.

We are planning to recruit a head mixologist to join us at the start of the year and work on setting up the bar over January, with a planned launch in February.

You must have:

- Prior experience working as a mixologist within a busy bar or restaurant
- UK experience as well as permission to work in the UK
- Good communication and presentation
- Easy transport links to Blackheath (SE3)
- An ability to work evenings and weekends

This is an exciting opportunity for a creative barperson to join a well-respected and growing restaurant in South East London. Start dates are flexible, however we would need you to be able to start by February when the cocktail lounge launches.
