Chilled Pubs are on the search for a Kitchen Skills Trainer to join their ever-growing family and drive excellence in our kitchen teams across the business.
Thinktowering burgers, wood fired pizza, giant swinging skewers, sweet bao buns and home-made Italian gelato sound good? We run an extensive fresh food menu that requires well trained, motivated, and passionate chefs to help us deliver this, and we believe a Kitchen Skills Trainer is a crucial part of the puzzle to work closely with our Head Chefs, to support the upskilling our kitchen brigades to deliver excellence to our guests
**Who are Chilled Pubs?**
It all started back in 2007 when Loren agreed to Richards crazy dream, and they together purchased the Bulls Head in Repton. Fast forward 17 years and they have a thriving pub business. With 7 gorgeous sites, over 500 employees, an industry leading food & drink menu and just to be a bit different, 7 mascot alpacas. Driven by their vision to become the top leading pub brand in The Midlands, they’re passionate about finding superstars to live and breathe their values and ensure all guests are truly wowed by their Chilled Pub experience. With no signs of slowing down, Richard and Loren are always on the lookout for their next project and would like to reach a portfolio of 20 pubs in the near future.
**What the role entails?**
- Positioned within the L&D Team at Chilled Pubs, the core of this role is to bring heightened focus to the development of our kitchen teams, taking a ‘proactive’ approach to improving the competencies of our chefs and leadership teams in our kitchens. In a nutshell, to “develop talented chefs and kitchen leaders for the future success of Chilled Pubs” By supporting our senior kitchen managers in the leadership of their teams, to ensure our businesses are safe, producing high quality food in an efficient manner, and that our new recruits are supported through an effective and thorough induction process.
- Whilst this is a new role to Chilled Pubs, and the requirements may naturally evolve and develop over time, we believe the core focus areas of this role are as follows:
**Induction Excellence**:
- Devise, implement and be the custodian of a structured approach to kitchen inductions at all levels. From day 1 and beyond, ensuring our teams have the best on-boarding experience to allow them to flourish into high performing chef
- To support the growth of our kitchen team’s skills & knowledge through a series of impactful and effective training workshops delivered in-house.
- Working closely with our digital team to ensure the timely delivery of engaging, relevant & impactful e-learning modules to aid personal and team growth of kitchen practices and procedures.
**5* Compliance**:
- To support the GMs & Head Chefs in our mission to maintain a 5* Food Safety score (via EHO) across the wider business via ensuring our teams are well educated in food safety laws and practices.
- Through a combination of learning methods, this role will drive excellence by ensuring our teams are following the standards laid out in the food safety policy.
**Food Quality & Timing**:
- A big part of this role will be to help ensure our teams deliver ‘spec to plate’, consistently well, time and time again. Your role will require working closely with our kitchen teams to ensure each individual possess elite menu knowledge both of the product, the cooking method, and the pre-service preparation required to deliver excellence to our guests.
- Running ‘Perfect Station’ training sessions on a weekly/fortnightly basis to all sites (think pizza / pass & pans / hot & cold larder / desserts), showcasing to our chefs how to set up for success, deliver spec to plate, in a timely manner, and deliver food to brand standards will be a fundamental part of this role.
- Timings: We utilise industry leading ‘ticket time’ data that helps us understand our opportunities to improve efficiencies across all sections of the kitchen, alongside making well thought through decisions when conducting menu engineering (we change our menus 2-3 times per year). This role will play a crucial part in supporting our teams in driving excellence in this area.
- Supporting our FOH teams and management teams in the effective running of the ‘Expedite’ role during peak service sessions. Helping the team understand the importance of effective communication with our chefs and how to feedback during peak service to ensure the quality of food, and presentation, isn’t compromised.
