Grain Barge is a converted barge moored in Hotwells with amazing views of Bristolharbour. As well as our main bar, we have outdoor space on the top deck, and space for events and private hire in the Hold Bar. We serve sustainably sourced seafood and veg dishes that use ingredients from our own farm in Backwell and other local suppliers, alongside craft beer + cider, cocktails, local or independent wines, spirits and hot drinks.

We are looking for a passionate food-lover with an interest in sustainable cooking and a flair for creating interesting and inspiring seafood, vegan and vegetarian dishes in a modern and classic way to suit an informal restaurant bar. We serve delicious, honest, home-made pescetarian food with bold flavours that celebrate the best seasonal produce from local suppliers, including our very own Five Acre Farm in Backwell. At Grain Barge, everything is made on board including breads, desserts, ferments, sauces and our signature fries.

Here in our independently owned venues, we give young enthusiastic chefs the opportunity to shine, to be creative and to bring ideas to our kitchen and we are on the lookout for a Head Chef to lead and inspire those individuals. We want you to both steer and work with the team developing our menus, to keep our regular customers coming back and entice new customers in.

Position summary:

  • To be a role model, leading and inspiring passionate young chefs, helping them grow in the early stages of their careers.
  • Responsible for the consistent preparation of innovative and creative cuisine of the highest quality, presentation, and flavour – including both casual dining, table service dining and private event catering.
  • To develop seasonal menus within quarterly menu cycles, with focus on Five Acre Farm produce, in conjunction with other select local food suppliers.
  • Maintain highest professional food quality and sanitation standards.
  • Manage food and labour budgets and areas of profit, including stock and wastage control.

This role offers a high level of freedom, allowing creativity and independence; whilst operating with consideration and respect for the environment and company goals of sustainable and responsible local food sourcing.

Our 5 Acre Farm, where we source much of our fresh ingredients, is a regenerative focused, sustainable farm and community interest organisation. Our kitchens look to craft seasonal dishes which uphold these values, and shine a light on the brilliant fresh fruit and vegetables which come out of the farm.

As well as working with the produce in our kitchen, you will have opportunities to visit, get your hands in the soil and learn first hand about all the goings on at the Farm by visiting the Backwell site.

Skills/experience:

  • Head Chef / Sous Chef 2+ years
  • Proven passion for working with quality local seasonal ingredients
  • Knowledge and understanding of working with current food trends and flavours
  • Event catering experience
  • Management and leadership
  • Budgets and forecasting
  • Recipe and food purchase specifications
  • Sustainable approach to managing kitchens and zero waste
  • Knowledge and experience with Microsoft Windows.

Hours and pay:

£30,000 pa

+/-45 hrs pw
