Location: St. James's Market, London

OVERALL OBJECTIVES:

SaEL, a renowned fine dining restaurant located in the heart of St. James's Market, London, is looking for a talented and passionate Pastry Chef De Partie to join our culinary team. As a Pastry Chef De Partie, you will be responsible for preparing and presenting high-quality desserts, assisting in menu development, and ensuring that all pastry items meet our exacting standards.

KEY RESPONSIBILITIES:

  1. Pastry Preparation: Prepare and present high-quality desserts and pastries according to the restaurants standards and specifications.

  1. Menu Development: Assist in the development and creation of new dessert menu items that align with the restaurant's culinary philosophy.

  1. Quality Control: Ensure the highest standards of quality, taste, and presentation for all pastry items produced.

  1. Mise en Place: Ensure that all mise en place is completed prior to service and that all necessary preparations are in place for a smooth operation.

  1. Team Collaboration: Work closely with the pastry team and other kitchen staff to ensure smooth and efficient service.

  1. Training and Development: Assist in training junior pastry chefs and kitchen staff, fostering a culture of continuous learning and improvement.

  1. Ingredient Sourcing: Assist in sourcing and selecting the finest ingredients, maintaining good relationships with suppliers.

  1. Health and Safety Compliance: Comply with all food safety, health, and safety regulations, and maintain a clean and organized work environment.

  1. Inventory Management: Assist in managing inventory levels and ensuring proper stock rotation to minimize waste.

  1. Continuous Improvement: Stay updated with current pastry trends and techniques, and continually strive to improve skills and knowledge.

QUALIFICATIONS:

  • Proven experience as a Pastry Chef De Partie or similar role in a high-end restaurant or patisserie.

  • A culinary degree or relevant certification is preferred.

  • Strong creativity and passion for pastry arts.

  • Excellent attention to detail and organizational skills.

  • Ability to work effectively in a fast-paced, high-pressure kitchen environment.

  • Knowledge of current pastry trends and techniques.

  • Strong communication and teamwork skills.
