Duties

  • Leadership and management of an established kitchen team, recruitment, training, and ongoing development
  • Development of new seasonal dishes in collaboration with the Director of Food
  • A strong focus on maintaining food safety, health & safety, and HACCP guidelines
  • Working to financial targets, including GPs and labour controls.
  • Preparing, cooking and presenting dishes within your speciality
  • Motivating a happy team to cook at a high standard
  • Monitoring portion and waste control to maintain profit margin

Skills

  • A minimum of 3 years at CDP is essential
  • Experience as junior sous or sous chef is preffered
  • Great cooking skills
  • A cool head
  • An ability to delegate appropriately
  • A motivational approach
