Castle Howard, a diverse working rural estate and award-winning visitor attraction, is seeking an experienced Sous Chef. Built over 300 years ago, Castle Howard remains a family home and welcomes over 250,000 visitors annually. The estate features a variety of attractions including a house and gardens, a changing programme of events, two gift shops, a farm shop, a garden centre, four cafés, and wider estate businesses such as farming, forestry, let property, and a holiday park. It is also available for private hire for weddings and corporate functions.



Job Summary:

Manage the daily operations over our three main F&B outlets - Courtyard Café, Boathouse Kiosk, and Fitzroy Café ensuring seamless functionality and delivering a quality and standard of food aligned with the Castle Howard brand. Work closely with the Executive Head Chef and other senior Food and Beverage managers to ensure the smooth running of the catering outlets, ensuring all food safety due diligence is complete and the policy is always adhered to.


Manage, train and guide a team, with a positive approach to the development of more junior colleges and apprentices. Be involved with the planning and delivering of banqueting and hospitality events. Create weekly seasonal specials with produce derived from the wider estate, walled garden and Farm Shop. Work closely with the Executive Heda Chef to develop and create new menus, and concepts, using experience and knowledge to deliver on budget and within time sensitive parameters. On occasion organise and run pop up catering at events across the Castle Howard Estate.


Duties & Responsibilities


  • Manage the catering operations in each outlet in the absence of the Executive Head Chef and other Sous Chef.
  • Plan and deliver a variety of banquet events with the guidance of Executive Head Chef.
  • Lead by example, support and mentor the junior catering team.
  • Ensure food is prepared, presented and served consistently to the highest standard.
  • Closely monitor food preparation making sure all recipes are followed precisely.
  • Assist with any special functions, private events and weddings including those which occur outside normal the working hours.
  • Ensure any best practices are communicated to the catering team.
  • Provide relevant training to colleagues as required.
  • Record any waste, ensuring perishable items are used in a timely and effective manner, with freshness and quality in mind.
  • Make sure all the catering outlets are well stocked with regular check-ups through the day.
  • Follow all processes and procedures within the catering team and the wider company.
  • Carry out all aspects of food safety and health & safety and operate in accordance with Castle Howard’s Health and Safety policies at all times.
  • Support with menu development, using produce from the estate and local businesses.
  • Undertake any other duties as may be reasonably required.


Person Specification

Essential

  • Full UK driving licence


Education/Qualifications/Training

  • Food Hygiene Level 2 or above


Knowledge & Experience

  • Good working knowledge and experience as a chef, with the drive to excel and creativity to develop dishes to company requirements showing personal flare
  • Working knowledge and practice of HACCP procedures.
  • Ability to manage a kitchen and other members of catering staff

  • First aid trained
  • NVQ Level 2 in Catering and Hospitality, or similar
