Are you a creative and experienced pastry chef with a passion for product development and team leadership? We are looking for a dynamic Head of Pastry and Development to join our team and take charge of our patisserie operations. As the business grows and develops it is expected that the person in this position will grow with the company.

In this role, you will be responsible for both the day-to-day management of the patisserie team and the development of innovative pastry products as outlined by our Directors. You will be hands-on in the kitchen, working in collaboration with the patisserie, shop, and office team to deliver this vision to the clients.

Key Responsibilities:

Product Development:nCollaborate with Directors to plan and price menus and food items for the year.nEnsure adherence to agreed pricing strategies.

Head of Pastry:nOversee the preparation and cooking within the pastry section of the kitchen.nAssist in ordering and obtaining supplies for the pastry section.nRecruit, train, and develop team members in line with agreed criteria.nSet actions and targets, appraise, and manage team performance.nCoordinate food preparation and ensure quality management for the pastry kitchen.nInvestigate and resolve customer complaints within agreed criteria.nAllocate workloads effectively among team members.nWork in the kitchen with the team to deliver the products to the shop and wholesale clients.

Team Leadership:nSupport Directors in meeting team and business targets.nFacilitate a smooth business operation by ensuring team cohesion and efficiency.nWorking with HR to recruit, train, and develop team members.nAddress customer complaints professionally and efficiently with the support of the Shop Manager.nDelegate tasks and manage team workloads.

Administration:nMaintain high-quality standards and accurate records.nEnsure sufficient staffing levels within agreed budgets.nConduct quality control of supplies, food, and kitchen hygiene.nComply with sanitation, hygiene, health, and safety regulations.nManage resources responsibly and control expenses within budgetary limits.nEnsure proper use and maintenance of equipment, including adherence to safety protocols.

Qualifications:nProven experience in a senior pastry chef role.nStrong background in product development and retail menu planning.nExcellent leadership and team management skills.nProficiency in maintaining high standards of food quality and hygiene.nStrong problem-solving abilities and attention to detail.
