JOB DESCRIPTION

JOB TITLE: PASTRY SOUS CHEF

REPORTS TO: HEAD PASTRY CHEF

JOB PURPOSE:

To assist the Head Pastry on the successful running of the Pastry section

Responsible for all areas of service, from ordering to food safety, food hygiene and participating in development of recipes for the Pastry section

JOB OBJECTIVES:

To ensure consistency in quality and cooking of all dishes sent out. To ensure the team bake and cook produce according to the recipe, standard and complying with food safety procedures

To ensure that the pastry section has the appropriate mise en place for each service and that stock ordering is done daily

To assist in ordering of produce, ingredients etc for the Pastry section

Manage and maintain standard work practices and standard operating practices for all equipment

To produce all pastry goods following recipes and guidelines set by the Head Pastry Chef

To be able to train chefs and apprentices in relevant aspects of pastry

To ensure safe workplace by identifying hazards and taking corrective action

To contribute the menu by creating new and innovative dishes in line with the food style and quality that is reflective of the property

To assist in writing recipes, update them when necessary and ensure these are shared with the team

To take responsibility for the training of junior team members

To manage the Pastry section in an efficient, effective and professional manner, maintaining staff morale and delivering on guests expectations

To motivate the Pastry team to work collectively and independently whilst nurturing creativity

To ensure that the team understand, comply with and follow the Company H+S policies and procedures at all times (Fire, Manual Handling, COSHH, First Aid, and Accident Reporting)

To ensure that the team understand, comply with and follow the Company Food Safety policy and procedure.

Qualifications and Experience required

Experience as a Junior/Sous Chef in a luxury restaurant environment

Experienced in managing and leading a team

Food Safety Level Three preferred
