Job Overview: I am currently working with a client situated close to the picturesque market town, just 40 minutes from the Suffolk coast in Suffolk. As part of a robust team of 12 chefs, we are in search of a Senior Sous with expertise in both restaurant and function cooking The Kitchen brigade boasts a diverse range of skills, and we are on the lookout for a Senior Sous who can effectively manage and mentor this great team on the Head Chefs days off.
The kitchen environment fosters excellent morale, with a great footfall and lots of repeat business the kitchen and front of house teams work together to build solid relationships with members and guests alike. As Senor Sous you will be a hands on operator, be a valuable support and an excellent communicator,
With a variety of small conference suites and a restaurant that can serve 20 - 40 covers mid week and 60 - 80 covers at the weekend we need a chef with experience of managing both types of business. With approximately 10 weddings a year, the focus is on the food and ensuring a high level of consistency utilising many of Suffolk's greatest local suppliers for the best ingredients.
3 month accommodation is available for anyone looking to relocate to the area.
Shifts can be splits or straights 45 hour a week - You will not be expected to work 70-80 hours Salary is subject to Tips
Responsibilities: - Collaborate with the Head Chef to create and implement seasonal menu ideas - Oversee food preparation, cooking, and presentation, assisting as and where needed in the kitchen and ensuring service is smooth on all occasions - Maintain high standards of food quality and hygiene and time keeping - Assist in training kitchen staff on proper techniques and procedures whilst keeping a great morale in the kitchen at all times - Manage inventory and control food costs and stock rotation - Ensure compliance with food safety regulations
Experience: - Proven experience working in a restaurant / function kitchen environment - Strong knowledge of food safety practices and regulations - Excellent cooking skills with the ability to prepare a variety of different cuisines - Leadership qualities with experience in team management, training and mentoring - Proficient in supervising kitchen operations efficiently
