DescriptionThe NPD executive chef will be responsible for working closely with the Head of Food to create new dishes / food products according to requirements given by the various customers within the Pasta Evangelists brand. You will be Continuously improving recipes and or preparation methods to meet business and client needs whilst keeping costs in mind.

What you'll do at Pasta Evangelists:
  • Production Menu development that delivers the Food strategy of Pasta Evangelists. 
  • Support the menu cycle refresh programme to ensure it is delivered on schedule – across Pasta evangelists Production – retails - ecommerce – Cloud Kitchens and Front Facing. All programs need to be on trend and scalable through multiple operations. 
  • Work with the Head of Food to ensure new recipes are developed and implemented successfully, with 100% accurate and scalable recipes and production methods, evaluating raw material and equipment. 
  • To ensure recipe methods and plating instructions are trained and executed. 
  • Maintain expert knowledge of our menus and share with the teams all across the channels. 
  • Hold feedback workshops with production chefs to ensure all the channels can execute the new dishes and opportunities to increase efficiencies are captured. 
  • Ensure that all the recipe cards are completed 100% for our large production. 
  • Ensure a wide range of carefully designed dishes (on trend, visually impactful, with bold and intense flavours) and are prepared, presented and delivered with pride and precision (detailed methods, training material & saleable recipes) as per your specifications and the attention to detail of uploading specifications, allergy matrices, product codes into our menu development bank. 
  • Awareness (and implementation/execution through great training) of current trends in the culinary region of the UK. 
  • Work closely with our Head of food and procurement team on product listings, development and innovation. 
  • Working with all our suppliers and organising innovation forums for the wider culinary team. 
  • Engaging/leading with suppliers on NPD. 
  • Producing comprehensive reports and action plans regarding calorie labelling, allergy matrices and product pricing. 
  • Ensure food allergies are treated with absolute seriousness and that all chefs are trained on correct food handling. 
  • Brilliant at the basics; food quality, food hygiene, and health and safety. 
  • Cost controls are in place and targets are met. 
  • Develop dishes where wastage is tracked, monitored and minimised. 
  • Build a meticulously detailed NPD process - Ensure all recipes, information and cost are kept updated in line with internal and external tastings as part of ongoing recipe and process development. 
  • Review current products, update products, process and commercials. 
  • Work closely with production teams across capabilities – review process and assist with updating process and or problem solving. 
  • Work closely with Procurement, Technical team & commercial team/ account managers. 
  • Conduct NPD Shelf life testing. 
  • Define, implement, and monitor processes to ensure compliance to all health and regulation requirements. 
  • Implement coaching and improvement programs as needed for the large production ensuring the “Restaurant quality “ sauces and pasta and other preparation are kept at high standard at all times. 
  • Own the NPD weekly meeting document for new products updates and follow up.

Most recently, we’ve been busy disrupting Britain’s pizza-centric Italian takeaway market with a brand new fresh pasta takeaway concept, available on pastaevangelists.com as well as major delivery players like Deliveroo, UberEats and JustEat. With more than 40 kitchens across the UK, we’re expanding coverage to new cities on an almost weekly basis (including our first openings in Scotland and Wales). We've also opened the UK's biggest pastificio (which, in Italian, means pasta factory, but 'pastificio' better reflects the type of fresh, artisanal pasta we produce) in Acton, West London, allowing us to make ever more exciting and ambitious pasta and sauces for our customers.
