Born in Yokohama, Chef Endo Kazutoshi is a third-generation sushi master, dedicated to the centuries-old Edomae style of sushi. Drawing inspiration from his father and grandfather, Endo seamlessly blends creativity and consistency, heritage, and innovation. At his debut restaurant, located on the top floor of the former Television Centre in White City, Chef Endo delivers a dining experience that is both immersive and intimate.

Position: Senior Sous Chef

We are seeking a passionate and experienced Senior Sous Chef to support both the sushi and hot kitchen operations at ENDO at The Rotunda. This role is critical in maintaining our high standards and enhancing the culinary experience for our guests. If you embody the spirit of ‘Omotenashi’ - the art of Japanese hospitality rooted in empathy and a spiritual exchange between host and guest - we want to hear from you.

Key Responsibilities:

  • Culinary Support: Assist Chef Endo in both sushi and hot kitchen preparations, ensuring the highest quality and consistency in all dishes.
  • Operational Management: Oversee day-to-day kitchen operations, ensuring everything runs smoothly and efficiently.
  • Inventory and Ordering: Manage ordering and inventory control, maintaining optimal stock levels and minimizing waste.
  • Cost Control: Monitor kitchen expenses and implement cost-effective measures without compromising quality.
  • Team Leadership: Train, mentor, and supervise junior kitchen staff, fostering a collaborative and high-performing team environment.
  • Quality Assurance: Maintain the highest standards of food safety, hygiene, and presentation.

Qualifications:

  • Experience: Previous experience as a Sous Chef in a high-end, fine dining environment with Michelin star credentials is required.
  • Culinary Skills: Proficiency in both sushi preparation and hot kitchen techniques.
  • Background: Familiarity with Japanese, Spanish, or French cuisine is desirable.
  • Leadership: Strong leadership and team management skills.
  • Attention to Detail: Exceptional attention to detail and a commitment to culinary excellence.
  • Legal Right to Work: Must have the legal right to work in the UK.
  • Flexibility: Ability to work evenings, weekends, and holidays as required by the nature of the business.
