The kitchens at the Grand Hotel are a hive of chefs using their culinary flair to create appetising dishes for all our guests. As Head Chef you will be a key team player in the kitchen, helping to ensure the effective running of the kitchen departments in a £3m F&B business that is a mix of casual dining, banqueting, afternoon tea and in room dining.

This role is ideal for an experienced Head Chef looking to gain growth to the next level with a luxury brand, further their career in food & beverage within hospitality and gain the opportunity to work with a proven Executive Chef and Hotel Management Team with multiple years' collective experience.

What you will do

• Motivate the team by leading from the front with confidence; being dynamic and positive at all times
• Contribute to business strategy discussions to ensure the maximum results for the business are achieved
• Work alongside the Culinary Director ensuring that standards of both food production and service are consistently high and that the agreed standards are maintained and regularly tested and reviewed
• Working with the Culinary Director to influence menu development
• Ensure the Kitchen is always organised to meet business demands, with particular attention being given to food costings and kitchen payroll
• Understand and participate in all target setting activities with Senior Managers within the hotel team and to ensure that these are communicated effectively to all other team members and achievements are reviewed and also communicated
• Carry out training with own team to continually improve the skill base of the kitchen brigade. To also become involved with the ongoing training of the other areas i.e. bar and restaurant, to assist in their product knowledge and thus improve upselling opportunities.
• Ensure compliance within the Kitchen with Legal, Government and Company. Policies relating to Health and Safety procedures, Allergens, Fire, and ensure team are also fully confident with their own responsibilities in these areas.
• Ensure that Risk Assessments and COSHH Assessments are carried out, reviewed yearly, training staff in all aspects.
• Be flexible to jump into any roll within the kitchen when needed.

Ideal candidate

• Experience working within a busy banqueting kitchen in a similar role with a proven successful track record of food revenue management, profit conversion and health and safety management is essential.
• Strong leadership skills required
• Have good experience in a mix of banqueting and casual dining
• We are looking for someone with a real passion for food and the drive to succeed in a new role
• Outstanding hygiene skills are essential
• Certificate in elementary food hygiene would be desirable
• Someone with exceptional communication skills and the ability to self-motivate
• Due to the nature of the work, the ideal candidate would be fully flexible in their approach to work and be able to work shift pattern through weekdays and weekends
