Food Excellence Manager

This role sits within the Food department in head office, with report to the Commercial & Development Director. They will be one of the gatekeepers of food quality in Farmer J and work closely with the Head of Food. Whilst the Head of Food focuses on menu development and training, this role focuses on ensuring the highest food quality standards are met throughout the estate. They will be technical and process-driven, with a background in food, a deep passion and knowledge of it, and will have worked in a restaurant or foodservice environment for a minimum of 5 years.


Main Responsibilities:


Supplier Ingredient Quality Management

  • Develop strong relationships with our suppliers. Report any issues to the suppliers and work collaboratively on corrective steps.
  • Follow up with site team ingredient complaints and work with the supplier on a resolution.
  • Investigate any food quality customer complaints related to suppliers with their technical teams.
  • Test ingredients to ensure quality standards are being upheld by our suppliers centrally in the development kitchen.
  • Conduct supplier audits and work with them to resolve quality issues.


Menu Item Quality Assurance

  • Investigate and identify any variables that can impact the quality of our food and drink menu items. Using evidence, update training documents, recipes and processes accordingly.
  • Understand the equipment in our restaurants and work with the equipment suppliers on their functionality and best practices to improve food quality consistency.
  • Build and implement a food quality reporting system


Preparation and Process Improvement

  • Work with the Operations team on identifying areas for improvement internally in food preparation, storage, shelf life, and service processes, as well as externally with our suppliers.
  • Ongoing shelf-life assessment of our menu items. Set shelf-life standards based on the test results.


Food Quality Training and Development

  • Assist the Head of Food on new menu launch training.
  • Stay updated on the latest food safety regulations, industry trends, and best practices, and communicate these to relevant stakeholders.

What we need?

  • Food related degree or equivalent experience
  • Relevant certifications in food safety and quality assurance (e.g. HACCP)
  • Minimum of 5 years of experience in foodservice environment
  • Proven track record of developing and implementing quality assurance programs
  • Strong knowledge of food safety regulations and standards
  • Excellent analytical, problem-solving, and decision-making skills
  • Exceptional communication and interpersonal skills
  • Ability to work independently and as part of a team in a fast-paced environment
