Who are we?
The Dusty Knuckle Bakery is a purpose driven business which operates busy cafes and restaurants, serving very high quality food and drinks whilst also distributing bread and pastry to other businesses. Whilst we considerour products at TDK to be some of the best in London, we are about much more than just baking.
TDK runs a youth training programme. We provide work-based mentorship/support, training, and employment opportunities to at risk youth, including those with offending histories. We believe in equipping trainees with the confidence, skills, personal accountability, and support network to develop productive, functional lives.
We have worked tirelessly since 2014 to grow the business from a fledgling start-up in a 40 ft shipping container into a profit-for-purpose food venture with strong brand recognition and a loyal following. We now employ 100+ staff and are developing training routes specifically designed and reserved for at-risk young people. Our social impact program is embedded within the bakery, kitchen, and café operations.
TDK is at an exciting time in its growth.
We expanded our production HQ and opened a second London site in 2021; we now aim to expand to other sites over the coming years alongside the expansion and refinement of our training program for young people.

We have a low turnover of senior positions at The Dusty Knuckle, so this is a unique and exciting opportunity to lead the HaringeyKitchen team.
Most Senior chef jobs involve long hours in a stressful environment. At The Dusty Knuckle Haringey, you are never expected to work more than 5 shifts a week or 8 hours long. If you do pick shifts you will always be paid overtime. The kitchen is heavily supported by our GM who works to ensure that the team at Haringey are happy, looked after and arent stressed even in busy shifts. You will also be working with our Executive Head Chef who will support your development in the role, training you directly in all menu changes which take place every 6-8 weeks, to ensure that when you are cooking every day, you are able to confidently lead a team of chefs in all aspects of the kitchen. We make everything in house from pickles and jam to nduja and porchetta.
This is a perfect role for someone who is a well seasoned chef but is now looking for a role in a more supportive environment where people are as important as the product. It is also a role that would work for someone who has good management skills and wants to hone their cooking.

What will you be doing?
Cooking and Organisation
Cook all food with TDK principles, avoiding waste, tasting regularly, feeding back to the Executive chef wherever helpful
Responsible for overseeing the preparation and presentation of all food to the expected standards set by the Exec chef.
Ensure the team are following effective quality/wastage control processes so high standards of quality and waste managementare maintained consistently
Role modelling a clean and clear, organised working environment at all times
Positive and receptive to monthly menu changes and adaptations. Continued support and ideas fed to the Exec chef
People
Day to day management of kitchen staff, chefs, KPs and trainees; ensuring TDK kitchen is a wonderful place to work, managing and supporting staff well-being and development in a culture that embodies TDK values, building morale, team spirit, accountability and professionalism
Assisting the Exec Chef in recruitment through training and inducting, setting and maintaining expected standards
Operations , compliance and Finances
Rota management (including sickness, holiday etc)
Day to day implementation of H&S. Assisting in training, including allergens and intolerances and safety at work
Responsible for the upkeep and maintenance of all kitchen equipment, communicating with the GM about faulty equipment and requirement
Reporting on TDK food sales, staff margins and wastage
Responsible for ordering within the budget set by Exec chef
Social Impact
Work closely with the Youth Training programme manager and GM to ensure we are delivering on our targets of our social impact of DK youth program
Work closely with trainers Blue Belts and youth trainees on shift
We are looking for someone who has a proven track record with/in:
Fantastic cooking skills and excellent knowledge in the principles of good food
Excellent communication and interpersonal skills.Bags of cheerful energy and can-do attitude
Role modelling appropriate kitchen behaviour-Kind, organised, calm, communicative and hard working
Experience of at least 4 years cooking in professional kitchens
At least 1 years kitchen management experience
