**Catering Supervisor**
**Summary**
We are a heritage steam railway operated by award-winning volunteers and supported by paid staff, bringing smiles to faces through the beautiful Hampshire countryside for 50 years.
You are an enthusiastic and energetic individual looking to make a difference in an exciting and varied role that will draw on every part of the catering mix, from motivating teams to creating glorious customer experiences. You are organised and confident, working as part of a small paid team and a large, dedicated volunteer base, so you’ll be comfortable working with a very wide range of people. You have an eye for detail and a flair for training and being trained. You are willing to get ‘stuck in’ with the teams, supporting them at throughout the year in all roles. A background in small independent operations would be an advantage.
**Purpose of the Role**
A service-led role supporting the co-ordination, planning, management and delivery of catering operations across the Watercress Line Heritage Steam Railway.
The role support the coordination of catering delivered primarily by volunteers across a large number of sites and products including
- The West Country Buffet café at Alresford
- The Tea Junction at Ropley
- The Beer Junction at Ropley
- A snack and ticket kiosk at Alton
- On-train snack services on standard running days
- Group lunch and tea services on standard running days
- Evening dining train services
- Lunchtime dining train services
- Real ale train evening services
- Pop up catering for large events

**Responsibilities of the Role**
**Planning and co-ordination**
- Support the forward planning of resources
- Support the coordination of catering activities across the operational and event timetable.
- Support the coordination of requirements for group visit catering
- Support the catering requirements for special, corporate, private and fundraising events.
**Leadership and Management of volunteers and staff**
- Support the motivation and management of volunteers
- Schedule staff and volunteer shifts and rotas in good time
- Support the training and monitoring of casual staff and volunteers
- Be an example, train and reinforce front of house standards
**Delivery of catering services**
- Support the planning of food and beverage menus appropriate to each product
- Supervise the preparation of food
- Supervise equipment maintenance and cleaning
- Deliver food services as required appropriate to your level of training.
**Maintenance of standards**
- Support compliance with health and safety regulations
- Maintain the HACCP documentation as directed by your line manager
- Support the training of staff and volunteers to maintain standards of recording and documentation
- Supervise the maintenance of the highest standards of cleanliness.
- Ensure snagging, equipment issue and accident reporting is maintained and sent through to the appropriate managers in a timely manner.
**Ordering and distributing stock**
- Manage stock to minimise wastage ensuring sufficient across the business
- Support the distribution of stock across the outlets, balancing deliveries and storage
- Order stock in a timely and organised manner, ensuring a balance of quality and value
- Supervise weekly and monthly stock takes
