**POSITION OVERVIEW**
Supporting the Food Safety Manager to ensure that the Celtic Collection Group and ICC Wales meets all required legislative obligations and drive for continuous improvement of food safety standards. To facilitate the ongoing implementation and development of food safety management systems and procedures ensuring that all teams are adhering to the highest standard. To provide support on all matters regarding Food Safety Management.
**GENERAL**
1. Responsible for helping to maintain a customer-focused culture which support the values expressed in the Resort Ambition and the Resort’s business goals of profitability and service quality.
2. Establishes and maintain effective and positive relationships within the team as well as other departments.
3. Complies with the resort’s Health and safety, Hygiene policies as well as all other resort policies and procedures.
4. Report all situations that may present a danger to guests or staff immediately to the relevant people and take action to rectify the situation if possible.
5. To ensure that resources are used effectively, minimising waste to protect our environment and to reduce costs.
6. To perform related duties and special assignments as and when required.
**JOB FUNCTIONS**
**Communication**
Responsible for communication through effective writing, speaking, and listening skills.
To encourage employees to actively participate in our progress through decision making and ideas.
Responsible for regular dissemination of information which is to encompass organisational and individual activities.
**Budgets**
Maintains an understanding and acceptance of the monthly budgets and a motivation to achieving these.
**Standards**
Responsible for establishing and maintaining all Standard Operating Procedures (SOPs) within their department(s), including but not limited to employee, customer, financial and health and safety objectives.
**Controls**
Responsible for supporting the above set standards, communicating these controls, and taking appropriate action when necessary.
Responsible for reporting on key performance indicators for the department based on the controls devised.
**Structure**
Responsible for maintaining a sound organisational structure within the department(s), focused on achieving the Resort and departmental goals and objectives.
**Team**
Responsible for the welfare and wellbeing of all departmental employees, promoting the professional career development of the team.
**Delivery**
Responsible for ensuring all equipment, tools and supplies are available and maintaining relationships with the suppliers of the equipment, tools, and supplies.
Responsible for the maintenance, security, computer systems, cleanliness, and appearance of the department(s), both front and back of house.
Responsible for delivering the product following set standards, exceeding the internal/external customer expectations.
Deliver the ultimate in professional internal/external customer service with the standards expected and trained within the department.
The cleanliness and presentation of the working space follow set standards.
Escalate any complaints to the Food Safety Manager immediately, providing full details.
Keep up to date with legislation.
Assist in the delivery of Food Safety compliance and continual improvement across the Collection and ICC Wales.
Assist in maintaining an effective food safety management system, ensuring it meets the HACCP principles and current legislation.
Assist with internal food safety, hygiene, food waste, food sampling, laboratory analysis, and audit programs; scheduling, monitoring, ensuring timely completion of non-conformities, and verifying preventative actions.
Review policies, procedures, risk assessments, and standard operating procedures at the request of the Food Safety Manager and Head of Department.
Report on internal food safety HPIs.
Assist in reporting on compliance against client KPI’s in all managed properties.
Provide support as requested by the Food Safety Manager and Head of Department to the managed properties where appropriate within the contract terms.
In the absence of the Food Safety Manager, is responsible for registering all food outlets and maintaining relevant legislative records.
Review and complete due diligence checks of all business food-related collateral, i.e., menus, product specifications, food waste.
