**Scope of Job**:Responsible for day to day running of main restaurant, bar lounge service at the Hotel.

**Main Duties **

To comply with all statutory and company regulations relating to Health Safety, hygiene, conduct of employees, fire emergency procedures, security of premises and of property.

To be fully conversant with Liquor Licensing Laws and Regulations and ensure that there is no breach of these laws by bar staff or guests.

To follow company procedures when managing staff.

To assist with staff training and development and to encourage them to up-sell food and beverage, and to continuously monitor and check standards of work and correct when necessary.

To ensure that all hotel cash handling standards are met and till checks are carried out at random to ensure these standards are met

To maintain good communications with the Events Department and all operational departments within the hotel.

To ensure that the guests queries and complaints are dealt with promptly and personally and serious situations reported to the Operations manager Duty manager.

To ensure that all guests receive good and prompt service and that all food is served to the agreed standard at all times.

To attend weekly Operations meetings in place of the CB manager to ensure an understanding of the business requirements.

To ensure that the lounge, restaurant and kitchen areas are always clean and tidy and set up to the required specification showing the facilities in the best light at all times.

To ensure that all glassware, crockery, cutlery and general equipment is stored and used in the correct manner. A monthly count of these items is required for stocktake and potential ordering.

To hold regular meetings daily team briefings ahead of each service communicating all information to staff in your department.

To work with CB manager to complete weekly rota timesheets on time passing relevant information to Personnel.

To liaise with the CB Manager Food team with regards to staffing levels, keeping close control of labour costs in relation to business levels.

To work with the CB Manager to recruit and induct new team members and carry out training to bring team members up to standard.

To work with the CB Manager to continuously develop team members in order to provide high standards of service as well as cross training. Sign off all training to ensure procedures are followed and team members are aware of their responsibilities.

To ensure ordering of consumables and any other items are requested via the Operations manager and signed off prior to ordering to ensure costs are controlled.
