Estate, Newcastle NE15 6UG).

**Hours of Work **47.5 hours per week across 5 days, with additional hours as required and at
Christmas.

**Background Information**

Block & Bottle is a multi-award winning butchers and bottle shop located in Heaton, Newcastle that was recently featured as the finale of The Hairy Bikers Go North series.

We are a whole carcass butchery and make all our own produce including, bacon, sausages, burgers and charcuterie. We have curated a shop brimming with exciting, locally sourced, free range, grass fed meats; tantalising hand-crafted charcuterie and mouth-watering craft beers and natural wines which are available to drink in or take out.

We have a shop in Heaton and a 4500ft2 facility in the west end of Newcastle where we hang and age all of our carcasses and make our sausages, bacon and charcuterie.

We are proud of our customer service and have a dedicated following of customers who come from the local area and also much further afield.

**Job Purpose and duties**

To manage all facets of running our successful whole carcass butchers shop, through team management and training to ensure our staff are knowledgeable, motivated, providing a full product range and exceptional customer service.
- Managing and running our busy shop in Heaton by being a focussed and proactive part of our management team to increase sales across the business.
- Managing the team at the shop through daily task lists and ensuring an efficient work environment and culture is promoted where all members of staff have the opportunity to learn and grow.
- Liaising with our Production Manager to ensure ordering is efficient and cost effective including negotiating with, and ordering from suppliers.
- Creating and promoting exciting new products for the shop and online web orders
- Working with and creating relationships with new suppliers
- Correctly prepare and store the meat to ensure the best quality produce.
- Setting up window and counter displays - cutting and displaying meat to a high standard whilst maintaining a clean and tidy work environment and shop.
- Reducing wastage and work with our production facility to create new products to utilise everything
- To manage and increase our online web order sales - cutting, packing and shipping orders and promoting new products.
- Providing exceptional customer service that goes above and beyond - providing cooking advice, answering customer queries and ensuring we have all products available for them.
- Working with the team to put on exciting nights and events.
- Making sure all paperwork is up to date including temperature checks, cooking logs, intake sheets etc. and ensuring that all aspects of EHO, health and safety, fire and other legislation is adhered to and paperwork is completed. Stay up to date with current legislation such as

“Natasha’s Law”, and promote a culture of prioritising food hygiene, health and safety and allergen advice/management.
- Maintaining a clean and tidy work environment.
- Cashing up, putting the banking together and completing our banking spreadsheet.
- To be the fire marshal and First Aider for the business.
- To happily take on new duties as the needs of the business grow.

**Person Specification and desirable skills**
- Whole Carcass Butchery Experience
- Excellent Management, leadership, organisational and communication skills
- Be able to work safely and tidily in a busy environment, and effectively manage stressful situations.
- Exceptional customer service skills and meat knowledge to be able to effectively advise customers on the best cuts of meat, cooking guidelines and allergen information
- Superb meat display skills
- Be physically fit enough to lift carcasses and be on your feet all day
- Be able to use Word, Excel, Slack (the communication app) and our till system
- Be a team player and have a solution purposed mind set
