Chef de Partie – Porterhouse Butcher and Grill/Saltwater Fish Company

Up to £35600

We have an excellent opportunity for an enthusiastic Chef de Partie to join Porterhouse Butcher and Grill/Saltwater Fish Company within the iconic food hall within the Fenwick department store within the heart of Newcastle

The Role

Working alongside our Head Chef Richard Wheatley and Sous Chef Connor Mackinnon you will be running a busy section within an established team of chefs. The position comes with fantastic progression opportunities within 21 Hospitality.

Porterhouse is all about the meat. We showcase what cooking with meat is all about. We have brought together a butchers counter, a steakhouse and a team of talented chefs. We aim to work only with the best products from Himalayan salt-aged beef to organic Wagyu. Porterhouse is an open kitchen and our Josper grill takes centre stage.

Saltwater is a fish Bar and Fishmonger. Our philosophy is we "cook what we sell and sell what we cook". We offer simple yet creative cooking, quality fish and seafood alongside keen and friendly service.

In the restaurant we offer small plates to sharing platters and our fishmonger sells a top quality range of seasonal fish and shellfish.

The Person

• To be successful for the role of Chef de Partie you will have:
• Experience of working as a Jnr Chef de Partie/Chef de Partie using fresh ingredients and producing high quality food in a similar kitchen environment
• Confident, creative and passionate about good food served well.
• Knowledge of classic cooking techniques
• The ability to work well within a team, be hard working and have a positive work ethic
• Trained to Level 2/3 in a Professional Cookery qualification or have relative experience.
• The ability to consistently meet customer expectations
• A sound understanding of good food hygiene practices
• An excellent command of the English language and a confident communicator
