Head Barista – Eve's Court – Café & Wine Bar

Papple Steading is a beautifully restored historic farmstead in the heart of East Lothian's countryside, dedicated to celebrating the region's agricultural heritage. Alongside cultural and event spaces, Papple is developing a food and drink programme that showcases the best of East Lothian and Scotland.
Eve's Court – Café & Wine Bar combines the relaxed warmth of a café with the refinement of a wine bar. Service runs from 10am–6pm, Wednesday to Monday, offering exceptional coffee, pastries, and light lunches alongside a concise wine bar-style menu in the afternoons. The focus is on ingredient quality, hospitality, and consistency — creating a space that feels welcoming, elegant, and rooted in its surroundings.
Role Purpose
The Head Barista will lead the coffee and hot drinks offering at Eve's Court, ensuring exceptional quality, consistency, and presentation across all beverages. You'll oversee the daily setup, maintenance, and calibration of all equipment, manage coffee stock and orders, and provide ongoing training for the front-of-house team. Working closely with the Manager and Director, you'll help set and maintain standards that match the overall ethos of Eve's Court.
Key Responsibilities
Oversee all aspects of coffee and hot beverage service, ensuring quality and consistency.
Lead daily bar setup and closing routines, including equipment calibration and maintenance.
Manage ordering, stock control, and supplier relationships for coffee and related products.
Train, mentor, and support team members to maintain barista standards across service.
Assist with general service, guest interaction, and wine bar duties as required.
Uphold cleanliness, hygiene, and safety standards across the bar area.
Support the development of new drinks and seasonal coffee offerings.
Ensure alignment of the coffee experience with the overall Eve's Court brand and guest ethos.
Skills & Experience
Proven background as a senior or head barista in a quality-focused café, restaurant, or hotel.
Excellent coffee knowledge, including espresso calibration, milk texturing, and latte art.
Confident managing and maintaining professional coffee equipment.
Strong communication and leadership skills with the ability to train and motivate others.
Passionate about hospitality, service, and creating memorable guest experiences.
Flexible and hands-on approach to support a small, growing team.
Working Pattern & Salary
5-day working week across Thursday to Monday.
Opening hours 10am–6pm, with potential for future evening expansion.
Approximately 30–40 hours per week.
£13.40 per hour / plus share of tips.
Job Types: Full-time, Permanent
Pay: £13.30-£14.40 per hour
