We're looking for a creative baker with an artistic eye, impeccable standards, and ideas for days. You'll craft beautiful bakes for our Aussie-inspired brunch and speciality coffee venue – think laminated pastries, cakes, cookies, cinnamon buns, and signature specials that pair perfectly with great coffee.

Responsible For:
- Daily Production & Quality: Mixing, lamination, proofing, baking and finishing (croissants, pains, cruffins, buns, cookies, cakes, loaf cakes, muffins, tarts, slices, brownies, etc.) to tight morning deadlines with consistent results.
- Creativity & R&D: Developing seasonal pastry specials and core recipes that are visually striking and taste incredible. Present range plans, test bakes and feedback notes.
- Presentation & Finishing: Glazing, garnishing, slicing and display—clean lines, neat layers, consistent portions, premium look every time.
- Recipe Systems: Writing, scaling and costing recipes; maintaining spec sheets, yields, portion sizes and allergen matrices.
- Coffee Pairing Mindset: Designing bakes that complement espresso, filter and seasonal drinks.
- Hygiene & Compliance: Upholding 5* standards—labeling, dating, storage, temperature logs, allergen management, cleaning schedules and EHO best practice.
- Stock & Waste: Ordering support, rotation, par sheets, batch planning and minimising waste through smart production.
- Teamwork: Clear comms with FOH and kitchen; adapting during busy periods; sharing knowledge and raising the bar for quality.
Required Experience/Skills:
- Experience: Solid, hands-on pastry/bakery background in a professional setting (essential). You can laminate, proof and finish under time pressure.
- Creative Eye: Strong plating and finishing skills; you care about clean lines, sharp cuts and photogenic pastry.
- Taste & Technique: Confident with lamination, enriched doughs, sponges, custards/creams, curds, ganache, glazes and syrups. Savoury pastry a plus.
- Consistency & Detail: You hit specs, manage proofing, and deliver repeatable quality.
- Organisation: Early starts, production schedules, batch planning and mise en place discipline.
- Food Safety: Knowledge of HACCP/allergens. Level 2 Food Safety (or willingness to obtain quickly).
- Nice-to-Have: Experience with gluten-free/vegan adaptations, menu engineering, and basic costing.
