Overview

We are seeking a driven passionate Head Pizza Chef to lead our team.

Job Purpose

  • The purpose of the role is to manage, maintain and develop the culinary standards of the SL'ICE kitchen to the highest level of food execution and delivery

  • Keep restaurant up to date and innovative with food trends in line with SL'ICE's management team and it's customers

  • Keep cost at all time under control – food and labour

  • Be an advocate for positive changes and improvements by consulting with the SL'ICE Management Team

  • Communicate effectively with senior management to ensure transparency on all matters

Experience/Skills:

  • Experience in Premium High-volume restaurant (s). Having a vision of refined cuisine, in a busy environment.

  • Managing a team of 4 or more staff

  • Capacity to be flexible for multiple special requests from management team

  • Previous background of Italian Cuisine or a Pizzeria

  • Effective communication skills and managing team.

Key Responsibilities:

CULINARY

● Ensure operation of the kitchen is efficient, smooth and in line with timings and quality

● Control purchasing on pricing, quality & stock levels

● All costing is correct and in in line with menu pricing

● Work with the SL'ICE management team on menu development

● Any changes and improvements have to be communicated to the entire kitchen team, Front of House team, General Manager at Bull and documented respectively

● All dishes on the menu and design must be approved by the SL'ICE management team and General Manager

STAFFING

● Team management: lead, motivate, inspire, progress and maintain moral

● Weekly rotas completed by given timelines – ensure all shifts are covered accordantly

● Manage appraisal structure

● Provide all training & development structure for all levels in the kitchen

● Spot talents and ensure key talent is discussed at Talent Mapping reviews

● Recognise good performances of existing team members and deal with poor performance accordantly

● Manage the recruitment level and coordinate with General Manager

● Effectively manage ER matters

● Control Labour cost in line with guidelines set by General Manager

HACCP

● Responsible for ensuring the team are complying with Company Food Safety Policies, procedures, health and safety requirements at all times

● Monitor and ensure the highest levels of cleanliness throughout the kitchen at all times

● Due diligence records are up to date and completed

● Food health & Safety parameters, training matrix are followed and completed

OPERATION

● Any dish on the menu require full descriptions incl. allergen matrix. Always updated and communicated to applicable chefs and FOH.

● Build effective and constructive relationships with both back and front of house teams to assist in ensuring the highest levels of service to our members and their guests.

● Attend all required meetings and briefings incl . FOH daily service briefing.

● Conduct weekly food tasting development / training for BOH and FOH to enhance engagement of the teams.

● All kitchen equipment and company belongings have to be overlooked and maintained. Any maintenance issues have to be notified to General Manager or the Maintenance team.

● All kitchen team members are suitably dressed and groomed at all times. Uniforms are presentable and clean.

● Lead by example and encourage team member to respect rules, equipment, team members and surrounding.

● Deliver adhoc tasks as requested by the General Manager and SL'ICE management team.

All your duties must be carried out effectively and in line with the ethos of BULL's whilst maintaining a good working spirit and a great team in a world class restaurant.

Job Types: Full-time, Permanent

Pay: £34,000.00-£40,000.00 per year
